Paleo Avocado Toast

You guys…it is Paleo Monday! For me that it is totally a thing as I reset after my free eating weekends and get back on track for my week of paleo eats. We love hosting parties or just having people over to hang out at the last minute on a weekend. Whenever I have people coming over, I like to have at least a few snacks for them to eat while we talk or watch tv. One of the easiest things to serve is dip with either bread or chips. My newest favorite is triple cheese kale dip because, well, it has three cheeses in it. You can totally call it just kale dip though to make yourself think you are eating vegetables!

I love trying new foods. I grew up in a really small town where the local Chinese joint was considered “exotic.” When I moved into a larger city with access to all kinds of cuisine, I really embraced them all and spent quite a bit of time trying all the different restaurants. One that I hadn’t had before and really wanted to try before was Malaysian cuisine. I couldn’t find a local restaurant to try easily so I thought I would attempt to make a dish at home inspired by the flavors of Malaysia. These Malaysian Chicken Meatballs were the result of some experimenting and I absolutely love how they came out.

Game day is coming! Just think: we are less than one week away from the BIG game. Buffalo Chicken Pinwheels

Easy Apricot Meatballs

Hosting events during the holidays {or any time} can really be stressful. There is the menu planning, guest counts and so many other things to think about. Finding a few items that you can use instead of having to make everything from scratch can be a true game changer. My favorite “holiday hack” is using premade meatballs and then dressing them up with a delicious sauce to totally transform them into the perfect party snack. A recipe that is always a hit at parties is my easy apricot meatballs.

Every year, we host a big Christmas cocktail party. I think about it all year and really put a TON of effort into putting it together. Holy almost mid-November already. Where is time going? Have you started thinking about Thanksgiving yet? We like to try and get together for a little pre-Thanksgiving with our friends {a Friendsgiving if you will} so I am definitely heavily focused on Thanksgiving recipes right now. Our meals with friends tend to be the kind where you can grab a few things and eat them on the move between one group of friends to another or while trying to keep all the kids at the table and eating. These mini stuffing muffins are the perfect option for that kind of meal because they are one bite and require no utensils!
