You guys…it is Paleo Monday! For me that it is totally a thing as I reset after my free eating weekends and get back on track for my week of paleo eats. Today, I am sharing with you one of my current snack obsessions. Do you love ice cream? Who doesn’t, right?! I am a huge ice cream fan and haven’t really met many flavors that I don’t like. Anything with peanut butter in it is a winner for sure. Fall Blog Hop: Pumpkin Queso Dip

 I’m a pumpkin lover. I actually eat pumpkin all year round and not just during the fall. But, when fall hits, I start adding pumpkin to just about everything {like cookies, dips, french toast and even hummus}. My most recent pumpkin tinkering came when I was making a queso dip for an upcoming fall party. Usually I just make my world’s best queso dip {seriously, that is not an exaggeration} but I wanted to try something new. So, I made pumpkin queso dip instead.

Adding pumpkin to make pumpkin queso dip is the best idea ever.

I love to snack! I could probably skip meals all together and just focus on snacking throughout the day if my family didn’t rely on me to provide them with meals.
