Mini Stuffing Muffins

November 9, 2014 By Shannah Coe 18 Comments

Holy almost mid-November already. Where is time going? Have you started thinking about Thanksgiving yet? We like to try and get together for a little pre-Thanksgiving with our friends {a Friendsgiving if you will} so I am definitely heavily focused on Thanksgiving recipes right now. Our meals with friends tend to be the kind where you can grab a few things and eat them on the move between one group of friends to another or while trying to keep all the kids at the table and eating. These mini stuffing muffins are the perfect option for that kind of meal because they are one bite and require no utensils!

This is the greatest idea to make Thanksgiving parties so easy! Make mini stuffing muffins so they are one bite and don't require any utensils.

H’s gymnastics studio has rearranged all of the furniture making it difficult to find a place to sit on Thursday nights. So, I’ve been killing time by going to visit the various nearby stores. I’ve been really trying to get inspired for something to make for an upcoming little get together with friends for Thanksgiving and this idea for mini stuffing muffins hit me.

I made these mini stuffing muffins super simple so that I knew I would be able to make them quickly because, especially this time of year, I am always short on time. So, I started with Stove Top stuffing and adding some additional flavor using Ranch dressing.

Mini stuffing muffins made with Stove Top would make a great last minute Thanksgiving recipe.

Mini Stuffing Muffin Ingredients

1 box Stove Top Turkey Stuffing
1 1/3 cup hot water
3 Tbsp Kraft ranch dressing
1 egg
1/4 cup dried cranberries
1/3 cup whole berry cranberry sauce

Let’s Make It:

1) Preheat the oven to 350 degrees. Spray a mini muffin pan with nonstick cooking spray. Set aside.

2) In a large bowl, combine the stuffing mix and hot water. Stir until the stuffing is just moistened. Add the ranch dressing and the egg. Stir well. Fold in dried cranberries.

3) Spoon the stuffing mix into the muffin cups.

I love the idea of making mini stuffing muffins in a muffin pan!

Bake for 15-20 minutes or until lightly browned. Remove and let cool in pan for about 2 minutes. Remove from pan and spoon cranberry sauce on top.

I have to admit that I was grabbing a few of these to munch on while I was getting ready to go out of the door. They are just the perfect size. And, since stuffing is a must at Thanksgiving, I think they make the perfect Thanksgiving recipe too.

Mini stuffing muffins make the perfect Thanksgiving recipe. They are one bite too which makes them easy to eat. A one bite mini stuffing muffin is an amazing idea for Thanksgiving.

Wow, those are cute (even though I shouldn’t think food is cute). I may have to try to make these at Thanksgiving because I like serving easy to grab foods!

I am usually a totally from scratch person too but the Stove Top made it so easy to make these in a pinch! It definitely saved me a ton of time and still let me put out something that tasted delicious. 🙂
