During the spring and summer months, I love changing up my routine and enjoying light, easy cocktails like this thyme limoncello spritz. This super simple cocktail only requires a few ingredients and is topped off with Riondo Prosecco for the perfect finish.

Thyme Limoncello Spritz

Just like Champagne, the term prosecco refers to a sparkling wine that is using a specific type of grape from a specific region: glera grapes grown in the north-east Veneto region of Italy. Prosecco is typically extremely reasonably priced and has become popular thanks to its light, fruity taste with just a hint of sweetness.

Thyme Limoncello Spritz

Riondo Prosecco is an authentic Italian sparkling wine and actually is the #1 sparkling wine in Italy. It features a twist off cap making it super easy to enjoy. Of course, you can also find Riondo Prosecco with a traditional cork closure too. No matter which bottle type I choose, I love using it in my cocktails because it provides just the right amount of effervescence.

Ingredients
  • 2 oz Limoncello liqueur
  • 3/4 oz Club soda
  • 1/2 oz Thyme simple syrup optional
  • 1 1/2 oz Riondo Prosecco
Garnishes
  • Lemon slices
  • Fresh thyme
Instructions
  1. 1. Combine Limoncello, club soda and simple syrup in glass. Stir to combine. Add ice until about 2/3 full. Add prosecco and garnish with lemon slices and thyme.
