Buffalo Chicken Pinwheels

Ok, so we are exactly one week away from the big day. That means you have one week to decide what to serve to all those hungry sports fans in between plays and commercials. The guys in our group always love anything buffalo chicken related so I will be serving a new take on my spicy sausage pinwheels: buffalo chicken pinwheels {or pizza wheels as the kids call them}!

These buffalo chicken pinwheels are the perfect game day food!

These start with the perfect pizza crust and then get topped with a yummy buffalo cheddar mixture and pulled chicken. I use the pizza crust yeast to make my crust because it is super quick and doesn’t have to wait to rise. It is perfect for throwing together fun appetizers like this one or for making your own pizzas. Plus, it has the perfect texture and taste for anything you want to make, from healthy to gourmet!

Ingredients for Buffalo Chicken Pinwheels:

1 1/2 cup flour + 2 Tbsp
1 packet Fleischmann’s pizza yeast
3/4 tsp salt
2/3 cup very warm water
3 Tbsp oil
1 8oz package cream cheese, softened
1 cup cooked, shredded chicken
1/4 cup buffalo sauce {I use Frank’s}
1 cup shredded cheddar cheese
4 oz crumbled blue cheese

Let’s Make It:

1) Combine 1 cup flour, pizza crust yeast and salt in a large bowl. Stir in water and oil. Mix until well blended. 

2) Gradually add additional 1/2 cup of flour until dough ball forms. 

3) Spread 2 Tbsp flour onto surface and turn pizza dough onto it. Knead on floured surface until dough is smooth and elastic. This will take 4-5 minutes. Roll into a large rectangle and place on a piece of plastic wrap. 

4) In a separate bowl, combine cream cheese, cheddar cheese and hot sauce. Stir until well combined. Stir in chicken. Spread onto prepared dough.

 5) Roll dough up and wrap in plastic wrap. Place in freezer for 5-10 minutes.

6) Preheat oven to 425 degrees. Lightly grease a large baking sheet with nonstick cooking spray.

7) Remove dough from freezer and slice into 1/4 inch slices. Place on prepared baking sheet. Top with crumbled blue cheese. Bake in preheated oven for 15-20 minutes or until lightly browned.

These little pinwheels are so delicious that Mathlete even asked me to just make them for his dinner one night. Be sure to make a double batch for your party because they are sure to go quickly!
