General Tso’s Wonton Cups

Game day is coming! Just think: we are less than one week away from the BIG game. I’ve been looking over my list of 100+ foods ideas and even the Whole30 friendly football appetizers for the past few days. Of course, I know that wings are a must at our party no matter what else I am making. In addition to regular wings, I also plan to make General Tso’s wonton cups too using frozen boneless chicken wings.

With all of the food I like to serve at our parties, I turn to prepared dishes to help me lighten the workload. Frozen or pre-cooked boneless wings make this recipe a breeze to make.

Ingredients for General Tso’s Wonton Cups:

12 wonton wrappers
12 Tyson General Tso’s boneless buffalo wings
2 cups shredded coleslaw mix
2 Tbsp peeled, minced ginger
½ cup rice vinegar
1 Tbsp soy sauce
2 Tbsp lime juice
1 Tbsp sesame oil
½ cup peanut butter
3 Tbsp Japanese Yum Yum sauce
Cilantro for garnish

Let’s Make It:

1) In a small bowl, whisk together ginger, rice vinegar, soy sauce, lime juice, sesame oil and peanut butter. Stir until smooth.

2) Put coleslaw mix in a large bowl. Pour dressing on top and stir to coat. Let sit for 15 minutes.

3) Preheat oven to 325 degrees. Lightly spray a muffin pan with cooking spray. Place one wonton wrapper in the bottom of each muffin tin cup. Bake for 10-15 minutes or until lightly browned and crisp. Cool for 5 minutes before removing from muffin tin.

4) Divide coleslaw mixture between prepared wonton cups. Top with boneless buffalo wings. Drizzle with yum yum sauce and garnish with cilantro.

I won’t tell you how quickly all 12 of these disappeared but it was fast! They were the perfect combination of sweet, heat and crunch. You can easily make the colelsaw mix and the wonton cups ahead of time and just assemble them right before the game is about to start. These guys look like you spent a ton of time on them when really you didn’t have to!
