Triple Cheese Kale Dip Challenge

We love hosting parties or just having people over to hang out at the last minute on a weekend. Whenever I have people coming over, I like to have at least a few snacks for them to eat while we talk or watch tv. One of the easiest things to serve is dip with either bread or chips. My newest favorite is triple cheese kale dip because, well, it has three cheeses in it. You can totally call it just kale dip though to make yourself think you are eating vegetables!

Thai Ginger Zucchini Soup

Ok, so you remember January when I was totally eating like a cave girl and doing Whole30? Well, a funny thing happens during Whole30 and you start doing “strange” things like eating soup for breakfast or eggs for dinner. I can’t tell you how many strange looks I got at 8am when I was warming up my Thai ginger zucchini soup in the office kitchen for breakfast. Not as strange as the guy with the turkey dinner waiting for the microwave but still some raised eyebrows. This soup is seriously so good though and, while most people would probably enjoy it for lunch or dinner, I some how really wanted it for breakfast a lot.

2014 Holiday Cocktail Party Blog Hop

Every year, we host a big Christmas cocktail party. I think about it all year and really put a TON of effort into putting it together. For me, party food has a few requirements: taste good, look good and be easy to eat without utensils.  It doesn’t hurt to be something that a lot of guests are at least mildly familiar with too.  When, I was prepping for an upcoming party, I was searching for things to make that I knew would be a hit and would also be easy to eat.  These spicy spinach artichoke stuffed mushrooms immediately came to mind.

Spinach Artichoke Pasta Bake

We are total pasta lovers in our house. From spaghetti with just a bit of olive oil and Parmesan cheese to easy pasta bakes or even rigatoni with butternut squash, we like to have pasta at least once or twice a week.  Of course, we try to change it up from time to time and try out a new recipe. I was dreaming of some spinach artichoke dip one night and decided to make a spinach artichoke pasta bake instead.

Spaghetti Squash Egg Muffins

Breakfast is one of those tricky meals for me.  I just can’t eat a donut or pastry and be satisfied.  I need some protein and love the idea of eggs for breakfast.  Working outside of the house though makes it a little difficult to actually get eggs each day.  That is where egg muffins save the day.  I am still in love with my Southwestern and broccoli with cheese varieties but this time around I wanted to load them up with vegetables so I made spaghetti squash egg muffins.

Gluten Free Loaded Cauliflower Soup

I’m not a gluten free eater.  I am fortunate to be able to have any of my meals with a healthy dish of gluten any time I want.  In fact, for the longest time, I turned my nose up at pretty much anything labeled gluten free convinced that it just couldn’t taste good.  Then, a friend of mine needed to go gluten free and I found myself exploring the world of gluten free cooking a little more so that I could continue to have her over for dinner without serving broccoli and water.  This loaded cauliflower soup is gluten free but you’d never know if I didn’t put it in the title.

Stuffed Sweet Potato Skins

At the beginning of the year, I asked on my Facebook page what readers were looking for in the New Year from the blog.  A friend of mine asked for more vegetarian recipes.  Now, I’m a meat eater to the core {with the exception of a year stint as a vegetarian back in college} so this was definitely a challenge for me.  I decided to start small and created stuffed sweet potato skins for a great vegetarian alternative to the traditional potato skins filled with bacon.
