Easy Yogurt Parfait

Breakfast is always the most difficult meal for me. During the week, I am at work by 6am and my body definitely doesn’t feel like eating before that. So, I always need something I can take with me to work and enjoy later. Since I leave so early in the morning, these also need to be things I can put together the night before and grab on my way out of the door. In preparation for our recent trip to New York, with a 6:30am train trip, I put together an easy yogurt parfait the night before and it was delicious.

Essential Road Trip Snacks

It is travel season! Summer always brings vacations, road trips to visit family or even just traveling to the local amusement park. Turkey, Apple and Brie Bites

I am always excited to partner with quality food brands like Hillshire Farm. As always, even though this post was compensated, all thoughts and opinions are my own.

I don’t think I’ve talked much about some of my recent changes in eating. I’ve cut out a lot bread and pasta items that I used to eat all the time. I still enjoy them from time to time but they don’t dominate my meals as much. Instead, I like to combine protein with fruits and vegetables whenever possible. It seems like I am always short on time so being able to have a few items on hand that I can grab on go is key. One of my newest favorite grab and go items are these turkey, apple and brie bites.

Only three ingredients to make a snack that is BIG on flavor. Yum!

Pumpkin Hummus

So far, I’ve been light on the pumpkin recipes here this year. Of course, the internet is blowing up with just about anything and everything pumpkin. I love pumpkin and have definitely been cooking/baking it with recently. I recently made the most flavorful pumpkin hummus and decided it was the perfect recipe to kick off pumpkin season here at Just Us Four.

A few days ago, we talked about my love of snacking and I shared with you one my absolute favorite new snacks using pepper jack cheese wedges from The Laughing Cow®.  Snacking can be a tricky thing though. It is so easy to hit the vending machine or grab the nearest bag of whatever chip that you walk by. I try to be much more mindful of my snack choices now that I know how much my kids mimic what I do. Choosing my snack choices more wisely not only helps me but also influences their food choices too. We are big fans of The Laughing Cow® spreadable cheese wedges because they come in so many different flavors so we are likely to find one that we like and make our snack.

I love to snack! I could probably skip meals all together and just focus on snacking throughout the day if my family didn’t rely on me to provide them with meals. Mathlete and I try to make sure we take time out from our crazy schedules to spend time as a family. Sometimes this comes in the form of a Sunday morning trip to the pool for a few hours and sometimes we decide to have a family movie night. We’ll pick a movie and plan to go down to the theater area in our basement and hang out. Of course, for movie night, the snacks we choose can be just as important as what movie we are watching!

Snack Time

Now that the weather is warm and the days are long, we spend a ton of time outdoors.  Sometimes we have a BBQ or other type of party planned but most of the time we are just hanging around watching the kids play.  After a little while, what we have for snack is usually where the conversation turns.  I am always looking for something that tastes great, is good for you and is also something the kids will eat.  On a recent, gorgeous morning, I decided that snack time would be the perfect time to introduce them to my new favorite snack bars.
