Thai Zucchini Noodle Salad

Let’s talk zoodles…you know, noodles made out of zucchini. I got a spiralizer back when I started Whole30 and I fell in love. Zoodles are a great noodle replacement and, with such a mild flavor, you can put them into just about anything. My favorite right now is making Thai zucchini noodle salad to replace the yummy sesame noodles I typically get.

Pumpkin Hummus

So far, I’ve been light on the pumpkin recipes here this year. Of course, the internet is blowing up with just about anything and everything pumpkin. I love pumpkin and have definitely been cooking/baking it with recently. I recently made the most flavorful pumpkin hummus and decided it was the perfect recipe to kick off pumpkin season here at Just Us Four.

So, we had a brief bit of amazing weather over the last weekend where it was actually cool enough for a light sweater in the evenings. I loved every minute of it.  Of course, being summer, it didn’t last long and we are right back to super hot temperatures. Red, White and Blue No Bake Cheesecake Recipe

I love July 4th!  Not only because I love our country but also because of all the fun events, decor and food that incorporates our national colors of red, white and blue.  This red, white and blue no bake cheesecake recipe came about as I was racking my brain trying to decide what to make for Memorial Day {same colors and all}.  I didn’t end up making it for that BBQ but got to playing around with the recipe later the next week with July 4th firmly planted in my head as inspiration.

Sushi Salad – Spicy Girl Roll

I am a total sushi addict.  I try to get it at least once per week and would probably eat it almost every day if I could.  One thing I am not quite ready to try though is rolling my own sushi.  Seriously, the thought of that totally scares me.  I know I don’t have the patience and would get frustrated with trying to learn. So, instead, I decided to take all of the flavors of my favorite roll (spicy girl roll) and make a sushi salad. 

Love this idea of sushi without the rolling and work.  A sushi salad sounds fantastic.

The Perfect Summer Side Dish: Zucchini Carpaccio

Summertime meals call for fresh flavors and lots of produce.  At our recent parent’s day out, one of the couples brought a dish I fell in love with and had to figure out to make once I got home.  For me, the combination of flavors made it the absolute perfect summer side dish.  I hit up the farmer’s market to make sure I got the freshest produce I could find.

Carpaccio is typically a dish that consists of raw meat that is sliced or pounded thin and served as an appetizer.  I took a little different approach though and sliced zucchini extremely thin to make my carpaccio.  I did keep the traditional flavors of lemon juice, olive oil and pepper though.
