Maple Roasted Butternut Squash

So, I love fall. It is my hands down favorite season {since Christmas isn’t technically a season I can totally say that}! The crisp days, the crunch of leaves under your feet and all the delicious flavors like cinnamon, maple and squash. Our weather has finally stopped its seesaw pattern of warm and cool and so now I am ready to really jump in with the fall recipes on our menu plan. One of the first recipes I made for this fall has become one of my favorites. I seem to make this maple roasted butternut squash over and over but never tire of it.

Thanksgiving Quinoa Stuffing with Pancetta

We are ticking away the days until Thanksgiving at a fast pace. It is almost scary to think it will be here in just a few weeks. Now is the time when most of us are thinking about our menus, selecting recipes and finalizing shopping lists. As you work on yours, I have a great recipe that you should consider making a spot for on your table: quinoa stuffing with pancetta.
The dressing {or stuffing depending on where you are from} is my favorite part of the Thanksgiving meal. I like to try all different versions and you can sometimes find two or three on our table for the holiday. This quinoa version is perfect for anyone who wants or needs to be gluten free.

This is a great recipe with all the flavors of traditional Thanksgiving stuffing but made gluten free by using quinoa instead. Quinoa Stuffing with pancetta is an awesome gluten free option.

Holy almost mid-November already. Where is time going? Have you started thinking about Thanksgiving yet? We like to try and get together for a little pre-Thanksgiving with our friends {a Friendsgiving if you will} so I am definitely heavily focused on Thanksgiving recipes right now. Our meals with friends tend to be the kind where you can grab a few things and eat them on the move between one group of friends to another or while trying to keep all the kids at the table and eating. These mini stuffing muffins are the perfect option for that kind of meal because they are one bite and require no utensils!
