Do you ever feel like you are always falling behind? You see that mom {or dad} who just seems to have it all together and feel just ever so slightly inadequate. As a working mom of two kids, I get that feeling all the time. I live in a place where most moms stay at home and seem to have endless amounts of time to plan playdates, volunteer at school, supply cupcakes for the bake sale and 1,000 other things. Of course, they also manage to have their hair and makeup perfect while doing it. Me, I’m happy to have lunches packed on time and a decent breakfast for the kids. While some moms are making homemade cinnamon rolls and pancakes every morning, we tend to be more cereal eaters in our house because who has the time. I know I probably won’t ever have time to make my kids pancakes on a busy weekday morning but I can make them pumpkin orange crescent rolls that will bake while I struggle with tangles in hair and forgotten paperwork in backpacks.

So, I love fall. It is my hands down favorite season {since Christmas isn’t technically a season I can totally say that}! The crisp days, the crunch of leaves under your feet and all the delicious flavors like cinnamon, maple and squash. Our weather has finally stopped its seesaw pattern of warm and cool and so now I am ready to really jump in with the fall recipes on our menu plan. One of the first recipes I made for this fall has become one of my favorites. I seem to make this maple roasted butternut squash over and over but never tire of it.

Back in September, I quietly set about doing Whole 30 for the month. I post a few snippets here and there on Instagram but I definitely wasn’t shouting to the world that I was immersed in a whole month of new eating habits. During the month, I craved granola because I could no longer have my delicious granola bars that had become snack staples in my life. Of course, being September, I needed pumpkin too so this paleo pumpkin granola was born.
