Do you ever feel like you are always falling behind? You see that mom {or dad} who just seems to have it all together and feel just ever so slightly inadequate. As a working mom of two kids, I get that feeling all the time. I live in a place where most moms stay at home and seem to have endless amounts of time to plan playdates, volunteer at school, supply cupcakes for the bake sale and 1,000 other things. Of course, they also manage to have their hair and makeup perfect while doing it. Me, I’m happy to have lunches packed on time and a decent breakfast for the kids. While some moms are making homemade cinnamon rolls and pancakes every morning, we tend to be more cereal eaters in our house because who has the time. I know I probably won’t ever have time to make my kids pancakes on a busy weekday morning but I can make them pumpkin orange crescent rolls that will bake while I struggle with tangles in hair and forgotten paperwork in backpacks.
I was chatting with some other moms who are in a similar situation as I am: multiple kids with two working parents. We all had those same feelings but, as I
was listening to them talk, I realized that we are ALL doing much better than we think. Whether you make 15 minutes each night for story time or go to soccer practice several nights a week, it is much better than you think! The point is: we all go out of our way to make sure our kids still get quality time with us and know we are invested in them despite all the other crazy demands in our life.
Something as simple as a quick breakfast where everyone sits at the table and prepares for the day makes a huge impact. These pumpkin orange crescent rolls are perfect for that kind of breakfast even if you just have 15 minutes to get it together. Pair them with a glass of Minute Maid® orange juice and we’ve got a breakfast that feels like a Saturday even though it may be a dreaded Monday.
Ingredients for Pumpkin Orange Crescent Rolls:
1 package crescent rolls
1/2 cup pumpkin puree
1 Tbsp honey
1 tsp pumpkin pie spice
Icing:
1/4 cup powdered sugar
1-2 Tbsp orange juice
Let’s Make It:
1) Preheat oven to 325 degrees. Separate and roll out crescent rolls.
2) In a small bowl, combine pumpkin puree, honey and pumpkin pie spice. Stir well. Spread on each of the crescent rolls and then roll up from widest end to smallest. Bake in preheated oven for 10-12 minutes or until lightly browned.
3) In a bowl, stir together powdered sugar and orange juice. Spread on hot crescent rolls.
