Green Chile Pumpkin Soup Recipe

September 12, 2018 By Shannah Coe 7 Comments

This green chile pumpkin soup recipe combines the slightly smokey flavor of a green chile with a creamy pumpkin soup for the perfect fall comfort food. Create this pumpkin soup with canned pumpkin for a simple recipe that is ready super quickly.

I usually don’t get excited about pumpkin until October but, with all the rain and cold weather we have had, I am totally craving a creamy pumpkin soup. I love the subtle flavors green chiles add to a standard pumpkin soup recipe making it totally irresistable.

I love using pumpkin in savory dishes and this green chile pumpkin soup is so delicious. It is the perfect fall soup recipe.

Maple Roasted Butternut Squash

November 25, 2014 By Shannah Coe 1 Comment

So, I love fall. It is my hands down favorite season {since Christmas isn’t technically a season I can totally say that}! The crisp days, the crunch of leaves under your feet and all the delicious flavors like cinnamon, maple and squash. Our weather has finally stopped its seesaw pattern of warm and cool and so now I am ready to really jump in with the fall recipes on our menu plan. One of the first recipes I made for this fall has become one of my favorites. I seem to make this maple roasted butternut squash over and over but never tire of it.

If you want fall on a plate, you want this maple roasted butternut squash recipe!

Fall Blog Hop: Pumpkin Queso Dip

October 13, 2014 By Shannah Coe Leave a Comment

I’m a pumpkin lover. I actually eat pumpkin all year round and not just during the fall. But, when fall hits, I start adding pumpkin to just about everything {like cookies, dips, french toast and even hummus}. My most recent pumpkin tinkering came when I was making a queso dip for an upcoming fall party. Usually I just make my world’s best queso dip {seriously, that is not an exaggeration} but I wanted to try something new. So, I made pumpkin queso dip instead.

Adding pumpkin to make pumpkin queso dip is the best idea ever.

Thai Butternut Squash Soup

October 9, 2014 By Shannah Coe 2 Comments

Enjoy fall at its best with this Thai Butternut Squash Soup recipe, its pure comfort food and the perfect blend of creaminess, spice and sweetness!

Once October hits, I am a huge soup fan. I eat soup at least a few times a week between lunches and dinners. While I love broth based soups like vegetable quinoa soup and spicy sausage and tortellini soup, my absolute favorite to this day remains Thai Butternut Squash Soup. Thai butternut squash soup is my favorite fall soup. It is creamy squash without the usual sweetness.

TBT – Pumpkin Macaroni and Cheese

October 2, 2014 By Shannah Coe 1 Comment

So, you know when you make something that becomes a family favorite and you share it with a ton of people {say, on a blog} but the pictures just don’t do the dish justice? Yeah, I have plenty of those cases. I’ve decided that those recipes need the equal opportunity to be discovered and tried so I have been taking new photographs of them and will be sharing them as a Throw Back Thursday series here and there. It won’t be an every Thursday thing but keep your eye out from some renewed love in an old dishes like this pumpkin macaroni and cheese.

The perfect fall twist on a traditional macaroni and cheese. I love the idea of making pumpkin macaroni and cheese by adding pumpkin to the sauce.

Oatmeal Pumpkin Sandwich Cookies

September 25, 2014 By Shannah Coe 7 Comments

Oatmeal cookies are Mathlete’s favorite. He doesn’t like a bunch of stuff in them and is always happy when I make them. I was making him a batch recently and decided to add some pumpkin cream cheese filling for those of us that like a little more oomph to our cookies. Man, I can’t even describe how fast these oatmeal pumpkin sandwich cookies flew off the plate!

The most amazing oatmeal cookies with pumpkin cream cheese filling.

Let’s play a little game. I’ll say {type} a word and you tell me the first thing that comes to your mind when you read it. Ready? Ok, the word is Fall. I’m guessing the results were mixed between pumpkin, squash and apple. Now, if I say apple, what do you think of? Hopefully a few of you said cobbler because today’s fall recipe is for individual apple cobblers.

Stuffed Acorn Squash

September 11, 2014 By Shannah Coe 1 Comment

Fall is here {or at least on its way} and I am loving the cooler temperatures. Fall is definitely my favorite season and I like to enjoy everything it has to offer from gorgeous weather to delicious comfort food. Once fall hits, I turn from zucchini and spaghetti squash and focus more on butternut squash and sweet potatoes. Fall and winter squash are so easy to find at just about any grocery store so it is so easy to use them in recipes. I was trying to decide what to make for dinner one night and decided to make stuffed acorn squash instead of pulling out my typical butternut squash.

Love the idea of filling fall squash for dinner.
