Have you ever been relaxing on your couch or in bed and get a call that “surprise” you are going to have a visitor for dinner? Or maybe your in-laws decide to drop in for a little visit? This time of year those unexpected visits come a lot more frequently than they do any other. While I always love a chance to visit with friends and family, it can be a little stressful to throw something together on short notice when my to do list is already full of other “get ready for the holidays” tasks. So, I turn to a few go to ingredients that I keep on hand at all times to be able to make something quick but delicious, like caramel apple pie shooters, for everyone to enjoy…even on short notice. Have you been apple picking this month? Well, if you haven’t and you can, I highly suggest you take advantage of the nice weather and go grab some of fall’s bounty. Then, once you have baskets full of apples and you are wondering what to make with them, come home and make these caramel apple enchiladas. You’ll thank me…I promise.

Individual Apple Cobblers

Let’s play a little game. I’ll say {type} a word and you tell me the first thing that comes to your mind when you read it. Ready? Ok, the word is Fall. I’m guessing the results were mixed between pumpkin, squash and apple. Now, if I say apple, what do you think of? Mason Jar Fever: Chocolate Eclair Cake in a Jar

Chocolate Eclair Cake in a Jar is a super simple dessert that requires no baking and is served in a mason jar! It is guaranteed to be a crowd pleaser and one of the easiest desserts you will ever make! It’s even easier to serve to a crowd because it’s in a jar!

Way back in the day {like before I knew what natural light for photography was}, I shared a family recipe that is always a hit: Chocolate Eclair Cake.  It is one of those non-baker desserts that you literally cannot.mess.up but always pleases a crowd. 

Check it out but ignore the awful pictures please {although a few of them are updated}!  One problem we sometimes have with the cake is serving it so I decided to do the food version of “put a bird on it” and put it in a jar.

Pineapple Right Side Up Cake

Our neighbors all like to get together from time to time for casual dinners. They range from cooking out to pizza in the driveway. The only thing they have in common is that everyone contributes something.

Just like our monthly dinner club meetings, I like to make something fun for these meals.  I’m not really a baker so I tend to go for dips or main dishes.  I wanted to branch out though so I decided to give a cake a try.
