Green Chile Pumpkin Soup Recipe

September 12, 2018 By Shannah Coe 7 Comments

This green chile pumpkin soup recipe combines the slightly smokey flavor of a green chile with a creamy pumpkin soup for the perfect fall comfort food. Create this pumpkin soup with canned pumpkin for a simple recipe that is ready super quickly.

I usually don’t get excited about pumpkin until October but, with all the rain and cold weather we have had, I am totally craving a creamy pumpkin soup. I love the subtle flavors green chiles add to a standard pumpkin soup recipe making it totally irresistable.

I love using pumpkin in savory dishes and this green chile pumpkin soup is so delicious. It is the perfect fall soup recipe.

16 Yummy Paleo Soups

September 22, 2015 By Jenna Shaughnessy 1 Comment

Hey everyone! This is Jenna from Wife in Progress back again, this time with some yummy Paleo Soups.

Once September hits and the air becomes crisper, I get an instant hankering for soup. I love to enjoy a warm, creamy bowl of soup while curled up on the couch. And just because I’m eating Paleo now doesn’t mean I will forego my creamy soup fix!

I  have tried most of these soup recipes and loved ALL of them. It’s amazing what some vegetables and coconut cream can do!

Thai Ginger Zucchini Soup

February 9, 2015 By Shannah Coe 5 Comments

Ok, so you remember January when I was totally eating like a cave girl and doing Whole30? Well, a funny thing happens during Whole30 and you start doing “strange” things like eating soup for breakfast or eggs for dinner. I can’t tell you how many strange looks I got at 8am when I was warming up my Thai ginger zucchini soup in the office kitchen for breakfast. Not as strange as the guy with the turkey dinner waiting for the microwave but still some raised eyebrows. This soup is seriously so good though and, while most people would probably enjoy it for lunch or dinner, I some how really wanted it for breakfast a lot.

A Busy Mom’s Lunch: Slow Kettle Soup

December 29, 2014 By Shannah Coe 2 Comments

Lunch is one of those meals that I rarely get to eat. Either I am too busy at work or I am chasing after my two littles and suddenly lunchtime is long past. I’ve been trying to get better about making sure I take time to eat lunch so I am less likely to snack late in the day and mess up my dinner though. I work in an office that is pretty far from any lunch options so I always take my lunch when I am in the office and I’ve started setting a timer for the days that I work from home. Recently, I discovered Campbell’s Slow Kettle soups and they have been the perfect lunch option for me!

Easy Gluten Free Jambalaya

December 23, 2014 By Shannah Coe Leave a Comment

Today starts the arrival of friends for Christmas which means my kitchen will be busy from now until New Year’s Day. I love it because I love cooking and sharing food with my friends and family. But, it also means I need to get creative so we don’t eat chicken every day. This year, I have also been working to reduce the amount of gluten in our meals and this easy gluten free jambalaya is a great way to feed those hungry people and still have a gluten free meal.

Thai Sweet Potato Soup

December 21, 2014 By Shannah Coe 2 Comments

Grab some peanut butter and use it to create this delicious Thai Sweet Potato Soup that will have everyone bringing their bowl back for seconds!

Every year, I serve a similar menu for Christmas. Mathlete doesn’t love turkey so, after Thanksgiving, we don’t have that again until next Thanksgiving. I started making a beef tenderloin a few years ago and it is always a hit.

Thai Sweet Potato Soup has a delicious peanut butter taste and is perfect for cold winter days.

Italian Meatball Soup

December 5, 2014 By Shannah Coe 4 Comments

For years, we have always gotten together and decorated our Christmas tree with friends and family. I love sharing one of my favorite Christmas activities with those that I love. Of course, with out busy schedules, we often end up decorating the tree during dinnertime which means hungry stomachs come along with the Christmas cheer. I like to have something that is easier to make but also filling for everyone to enjoy in between hanging ornaments. One of my favorites is Italian Meatball Soup.

Thai Butternut Squash Soup

October 9, 2014 By Shannah Coe 2 Comments

Enjoy fall at its best with this Thai Butternut Squash Soup recipe, its pure comfort food and the perfect blend of creaminess, spice and sweetness!

Once October hits, I am a huge soup fan. I eat soup at least a few times a week between lunches and dinners. While I love broth based soups like vegetable quinoa soup and spicy sausage and tortellini soup, my absolute favorite to this day remains Thai Butternut Squash Soup. Thai butternut squash soup is my favorite fall soup. It is creamy squash without the usual sweetness.

Gluten Free Loaded Cauliflower Soup

April 17, 2014 By Shannah Coe 5 Comments

I’m not a gluten free eater.  I am fortunate to be able to have any of my meals with a healthy dish of gluten any time I want.  In fact, for the longest time, I turned my nose up at pretty much anything labeled gluten free convinced that it just couldn’t taste good.  Then, a friend of mine needed to go gluten free and I found myself exploring the world of gluten free cooking a little more so that I could continue to have her over for dinner without serving broccoli and water.  This loaded cauliflower soup is gluten free but you’d never know if I didn’t put it in the title.
