Fall Blog Hop: Pumpkin Queso Dip

 I’m a pumpkin lover. I actually eat pumpkin all year round and not just during the fall. But, when fall hits, I start adding pumpkin to just about everything {like cookies, dips, french toast and even hummus}. My most recent pumpkin tinkering came when I was making a queso dip for an upcoming fall party. Usually I just make my world’s best queso dip {seriously, that is not an exaggeration} but I wanted to try something new. So, I made pumpkin queso dip instead.

Adding pumpkin to make pumpkin queso dip is the best idea ever.

Once October hits, I am a huge soup fan. I eat soup at least a few times a week between lunches and dinners. TBT – Pumpkin Macaroni and Cheese

So, you know when you make something that becomes a family favorite and you share it with a ton of people {say, on a blog} but the pictures just don’t do the dish justice? Yeah, I have plenty of those cases. I’ve decided that those recipes need the equal opportunity to be discovered and tried so I have been taking new photographs of them and will be sharing them as a Throw Back Thursday series here and there. Back in the day, Mathlete and I were hardcore tailgaters. I used to love planning what we would take to the game to eat and drink. We had the luxury of our fellow tailgaters having a grill and we had a great little propane stove making it easy to have just about any we wanted. Let’s talk fall. It is 90 degrees here today but earlier in the week I could start to feel a slight crisp in the air. Of course, that got me dreaming of apples, pumpkin and all the other things that come with fall. My absolute favorite things in the world are cookies and cheesecake {well, foods…drinks would of course be lattes and wine}! Stuffed Acorn Squash

Fall is here {or at least on its way} and I am loving the cooler temperatures. Fall is definitely my favorite season and I like to enjoy everything it has to offer from gorgeous weather to delicious comfort food. Once fall hits, I turn from zucchini and spaghetti squash and focus more on butternut squash and sweet potatoes. Fall and winter squash are so easy to find at just about any grocery store so it is so easy to use them in recipes. I was trying to decide what to make for dinner one night and decided to make stuffed acorn squash instead of pulling out my typical butternut squash.

Love the idea of filling fall squash for dinner.
