Mustard Balsamic Chicken Kabob Recipe

April 28, 2015 By Shannah Coe 7 Comments

Get outside to enjoy the nice weather and make this mustard balsamic chicken kabob recipe. These chicken kabobs are perfect for the grill and packed with flavor. You will want to make them over and over.

It is grilling season! Once the weather turns just the slightest bit warm, we break out the grill and it doesn’t get put away until the snow starts to fall. Grilled chicken kabobs are one of our favorite dinners and this mustard balsamic verion wins top billing on our summer menu.

Slow Cooker Turkey Breast

October 27, 2014 By Shannah Coe Leave a Comment

This is the easiest Slow Cooker Turkey Breast recipe ever! It produces a perfectly cooked and juicy tender turkey breast every time!

For several years, Mathlete and I would have a small Thanksgiving at home before heading off to celebrate with family the next day. Of course, with only a few people, it didn’t make much sense to cook a huge turkey.

A perfectly cooked turkey breast in the slow cooker! So easy and perfect for the holidays.

TBT – Pumpkin Macaroni and Cheese

October 2, 2014 By Shannah Coe 1 Comment

So, you know when you make something that becomes a family favorite and you share it with a ton of people {say, on a blog} but the pictures just don’t do the dish justice? Yeah, I have plenty of those cases. I’ve decided that those recipes need the equal opportunity to be discovered and tried so I have been taking new photographs of them and will be sharing them as a Throw Back Thursday series here and there. It won’t be an every Thursday thing but keep your eye out from some renewed love in an old dishes like this pumpkin macaroni and cheese.

The perfect fall twist on a traditional macaroni and cheese. I love the idea of making pumpkin macaroni and cheese by adding pumpkin to the sauce.

Spicy Tilapia Ceviche

July 14, 2014 By Shannah Coe 3 Comments

I love ceviche but don’t get the chance to eat it very often. I had been dreaming of it ever since we went on the Miami Culinary tour during Blogher Food so I dragged Mathlete to the Mexican place that I usually order it from. They have the most amazing shrimp ceviche. Well, #sadpandaface, they don’t have it anymore! The only ceviche they have has scallops and I really dislike scallops. So, I decided I was going to make it at home and made spicy tilapia ceviche for dinner one evening.

Spicy ceviche made with fresh tilapia and peppers.

Sausage and Pepper One Pot Pasta Recipe

July 1, 2014 By Shannah Coe 4 Comments

In my dreams, summer is a time to slow down and relax.  Days are spent lounging by the pool and nights are spent with delicious dinners on the deck. I’m a good dreamer, right? Reality is far different around here. Gymnastics practices are longer, camp carpools are added into the mix and getting dinner on the table becomes so much harder.  Oh, add the heat into that mix and turning on an oven or stove and cooking just loses its luster. That is where the beauty of something like this sausage and pepper one pot pasta comes into play.  It is one pot and a meal that cooks in under thirty minutes. Sound too goo to be true? Well,  you definitely aren’t dreaming 🙂

One pot is all this recipe takes to make an amazing pasta dish the whole family will love.

No Boil Barbecue Chicken Alfredo Lasagna

December 12, 2013 By Shannah Coe 12 Comments

“This post is part of a social shopper marketing insight campaign with Pollinate Media Group™ and Barilla, but all my opinions are my own. #pmedia #JoytotheTable  http://cmp.ly/3/8vNxcO.”

My family loves pasta.  Like, seriously loves pasta!  I love the convenience of many pasta dishes too…especially lasagna because it can be assembled ahead of time and cooked later.  Plus, lasagna is one of those dishes that gets a little better the day after too.  The problem: I am not really a traditional lasagna lover so I tend to skip it when making my weekly menu plan.  The other day, I was looking at how crazy busy our week is going to be and decided lasagna would be the perfect thing to fill one of our empty days.  I stopped on the way home from getting my haircut and grabbed the ingredients I needed to make No Boil Barbecue Chicken Alfredo Lasagna.

This is a great idea and totally different take on lasagna! YUM!
