Paleo Chicken Chili

Southwestern Turkey Burger

Summer is in full swing here. Our temperatures range from the mid-70s all the way up to almost 100. No matter what the temperature outside, we are always up for firing up the grill to cook dinner. Burgers are one of our favorite things to cook on the grill. While a good beef burger is always a winner, we tend to stray a little from the standard burger fare and opt for something like a chicken apple burger or a southwestern turkey burger.  They are so good hot off the grill and topped with a slice of melted VELVEETA® loaf.

Chipotle Chicken with Avocado Salsa

Mondays during the summertime are always a little tougher. We spend a ton of time outdoors enjoying the pool or just hanging with friends so it is always a little harder to get back into the grind of the office. Of course, it doesn’t help when I also have wine slushies around the house either. So, in addition to resetting myself back into work mode, I also try to reset my body back in better eating mode. In our house, we do paleo meals Monday through Friday and then allow ourselves to indulge on the weekends. To me, it really is the best of both worlds. I don’t have to give up my cocktails and nachos, but I still give my body really good, real food for most of the week. This week, chipotle chicken with avocado salsa is on my menu.

Tropical Guacamole

I have probably mentioned before that my four year old is totally obsessed with guacamole. If you have met us in person, you know it is quite the spectacle. He will eat guacamole {or more recently just plain avocados} every day if given the change. I love guacamole myself but not quite that much! We’re huge Mexican food fans in our house. Seriously, my kid eats guacamole by the truck load and we have at least one Mexican inspired dish on our menu every week. So, of course, we are super excited about Cinco de Mayo. The only bummer is that it is a Tuesday which means I won’t have time to put together a lot of stuff for our celebration. Thankfully, I know where to get delicious taquitos and tamales. Then, all I have to do is make a few delicious sauces and toppings so my family can make their own taquito platter. One of our favorite sauces is jalapeno kale dip which my kids think is just avocado ranch {and I am not tell them any different since the word kale would instantly get a disgusted face and rejection}.

Margarita Chicken Rice Bowl

I am so excited to continue my work with Success® Rice by sharing this recipe with you that has become a family favorite of ours. As always, while I was compensated for this post, all opinions and thoughts are my own.

We are big Tex-Mex and Mexican food fans. From burritos to quesadillas, we love the flavors of lime, cilantro combined with a hint of spice. One of my favorite things to get when we go places like Chipotle is a rice bowl. I was at home one evening and really craving one so I decided to make my own version. This margarita chicken rice bowl is so easy to make and ridiculously delicious too. You may never go to Chipotle again because you’ve got something even better that you make at home!
