Turkey Tacos with Cranberry Salsa

Don’t give away your Thanksgiving leftovers this year. Use them to make these delicious Turkey Tacos with Cranberry Salsa and have everyone asking for more!

Thanksgiving always leaves a bunch of leftovers in our house. I know most people try to give them away so they don’t have to worry about the food going to waste or having to eat the same thing over and over again. I am just the opposite.

Use your Thanksgiving leftovers to make delicious turkey tacos with cranberry salsa. #UseYourLeftovers

I love leftovers and always look for a way to use them in different ways so no one says “turkey, again?!” Being major lovers of Tex-Mex and Mexican food {my 4 year old eats orders a bowl of guacamole for himself at dinner}, I knew I wanted to put a little spice into my leftovers dish this year and make Turkey Tacos with Cranberry Salsa.

These turkey tacos start out with whatever leftover turkey you have. Then, use up some of those fresh cranberries to make a delicious cranberry salsa to put on top.

The result is one that will keep you from hearing any complaints about having turkey again so close to Thanksgiving. Well, and if not, just do what I do and give the address to the closest fast food restaurant for them to go find something else! 😉

The BEST idea for using Thanksgiving leftovers: turkey tacos with cranberry salsa I love the Tex-Mex spin on Thanksgiving leftovers. Oh yum! Turkey tacos with cranberry salsa...I will make these even when I don't have leftover turkey from Thanksgiving to use.

I absolutely love the combination of the tangy cranberry salsa with the cool, creamy cilantro sauce on top. This is such a great way to #useyourleftovers or, if you just feel like having turkey another time of the year, to serve without all the traditional sides.

  • Mixing bowls

Turkey Tacos with Cranberry Salsa

Ingredients
Tacos:
  • 2 cups Leftover Turkey chopped or shredded
  • 2 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Paprika
  • Small Tortillas
Salsa:
  • 2 cups Cranberries
  • 1 cup Fresh Cilantro finely chopped
  • 1/2 Jalapeno minced
  • 1/4 cup Red Onion chopped
  • 2 tbsp Sugar
  • 1/4 cup Lime Juice
Cilantro Sauce:
  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/2 cup Green Yogurt
  • 1/4 cup Lime Juice
  • 1 cup Fresh Cilantro chopped
Instructions
  1. Place cranberries into the bowl of a food processor. Pulse until finely chopped. 

  2. Transfer to a bowl and add cilantro, jalapeno and red onion.

  3. In a separate bowl, combine sugar and lime juice and stir until the sugar dissolves. Stir into cranberry mixture. Refrigerate for 30 minutes.

  4. In a bowl, combine turkey with cumin, chili powder and paprika. Stir well to combine.

  5. Place mayonnaise, sour cream, Greek yogurt, 1/4 cup lime juice and 1 cup cilantro into a food processor bowl. Pulse until combine and the cilantro is finely chopped.

    These were great. I don’t do traditional turkey so I used a pre-marinated turkey breast loin. The recipe makes an ungodly amount of cream sauce. You could make half of it and probably have leftovers. Fortunately it’s delicious and I’m going to use it instead of ranch dressing in another recipe.
