Jalapeno Kale Dip for Cinco de Mayo

We’re huge Mexican food fans in our house. Seriously, my kid eats guacamole by the truck load and we have at least one Mexican inspired dish on our menu every week. So, of course, we are super excited about Cinco de Mayo. The only bummer is that it is a Tuesday which means I won’t have time to put together a lot of stuff for our celebration. Thankfully, I know where to get delicious taquitos and tamales. Then, all I have to do is make a few delicious sauces and toppings so my family can make their own taquito platter. One of our favorite sauces is jalapeno kale dip which my kids think is just avocado ranch {and I am not tell them any different since the word kale would instantly get a disgusted face and rejection}.

Jalapeno Kale Dip

Delimex Taquitos and Tamales are awesome because you can grab them from the freezer and have a fresh, hot meal in 30 minutes. That gives you plenty of time to whip up a few toppings like pico de gallo or mango pineapple salsa and sauces like sriracha sauce or jalapeno kale dip. They all go perfect with the taquitos and tamales. Then, all you need is a few sombreros and you are ready to celebrate Cinco de Mayo!

Jalapeno Kale Dip Ingredients:

1 cup sour cream
4 oz cream cheese, softened
1/2 cup ranch dressing
1 jalapeno
1 cup kale, roughly chopped

Let’s Make It:

1) Add cream cheese and sour cream to a food processor. Process until smooth. Add remaining ingredients and process until well mixed. Refrigerate for 15 minutes before serving.

I take the total casual approach to my Cinco de Mayo entertaining and I just put everything out and let people build their own little plates. My kids like to use the taquitos like nachos and just pile everything on top. I prefer the dip method. Either way, we all have a great time and enjoy a delicious meal.

    This Jalapeño Kale Dip looks amazing! I am a huge fan of Kale, but haven’t thought to incorporate it into a Mexican meal. Looking forward to serving this the next time we have Delimex taquitos! #client
