Tropical Guacamole

I have probably mentioned before that my four year old is totally obsessed with guacamole. If you have met us in person, you know it is quite the spectacle. He will eat guacamole {or more recently just plain avocados} every day if given the change. I love guacamole myself but not quite that much! I’ve been trying to change it up for him from time to time and recently made a tropical guacamole that he absolutely loved!

Easy and delicious tropical guacamole

Now this guacamole gets the perfect little dose of tropical feel from a yummy pineapple mango mixture that is stirred into the guacamole and added on top too. I love how the sweetness helps cut the heat of the guacamole just enough. Definitely put this one on your Cinco de Mayo list this year!

Tropical Guacamole Ingredients:

2 avocados
2 serrano chiles, finely chopped {seed them if you don’t want it to be spicy}
1.5 Tbsp lime juice
1.5 Tbsp cilantro, finely chopped
1 tsp kosher salt
Pineapple Mango Salsa:
1/2 cup fresh mango, chopped
1 cup fresh pineapple, chopped
1/4 cup red onion, diced
1/2 Tbsp pineapple juice

Let’s Make It:

1) In a small bowl, mix together salsa ingredients. Stir to combine and set aside.

2) In a large bowl, mash together, avocados, chilies, lime juice and salt. Stir in cilantro and 1/2 cup of salsa. Mix well. Cover and refrigerate until ready to serve.

3) Right before serving, spoon 2 Tbsp of salsa on top of guacamole.

Tropical Guacamole

I serve this with chips for the family but it is completely paleo all on its own so grab some jicama wedges and dig in for a yummy paleo appetizer or snack!

This guacamole is the perfect spin on regular guacamole.

Of course, keep a little of the salsa to the side for people who don’t like guacamole {yes, they are out there} to enjoy too. I would just toss a minced jalapeno and cilantro in with it. {A full recipe for the salsa can be found with my pineapple pork tacos}

Ingredients
  1. 2 avocados
