Every party needs an delicious one bite appetizer that the host can easily make in advance but also stands the test of the hours long it sits during a party. Prosciutto cups with pear and goat cheese are perfect for parties because much of the prep can be done 1-2 days ahead.

Melon Prosciutto Crostini

June 28, 2016 By Shannah Coe Leave a Comment

Ok, summer is definitely here. We are rocking 80+ temperatures every day and the farmer’s market and grocery store are filled with delicious items like summer melons. With the warmer weather and the longer days, we are doing a lot more “entertaining” {I use that term lightly because it is really me just putting out food and everyone hanging out} and so I am always looking for quick and easy recipes to throw together. Combine fresh summer melon with cheese and prosciutto for an easy appetizer that can’t be beat.

1 Ingredient Banana Ice Cream

August 18, 2015 By Jenna Shaughnessy 1 Comment

1 Ingredient Banana Ice Cream

I’ve recently cut out all refined sugar from my diet. Once I set my mind to it (and saw the lbs start to drop off!) it was easier than I had initially thought. But, it’s summer, and I would still like to enjoy an ice cream every so often.
I’ve seen this recipe for 1 ingredient banana ice cream on Pinterest for a while now and have been dying to give it a try. I wasn’t sure that it would really taste like ice cream but BOY was I wrong! It’s also a great way to use up those over-ripe bananas…there’s only so much banana bread you can eat!

This couldn’t be easier to make: You want to use 4 or 5  over-ripe bananas (the browner they are, the sweeter the ice cream will  be!).

1 ingredient banana ice cream

Peel them and slice. Place the slices on a plate and freeze overnight. Then, all you have to do is blend them up in  food processor/blender until thick and creamy!

Now, in the spirit of being sharing, I’m going to let you know that I froze my bananas whole with the skins still ON. Don’t do this, they are impossible to peel once they are frozen!! You could peel first, then freeze but I reckon slicing them up first would make the process a whole lot easier.

If you want to serve it right out of the blender, expect a “soft-serve” consistency. To make it a bit more solid, pop in a freezer-proof container and chill for at least 2 hours.

Who knew that pureed frozen bananas were so thick and creamy!? Honestly, if you love ice cream and bananas then you will adore this. It’s Paleo friendly, dairy free, (added) sugar free and a great guilt-free treat for both kids and adults alike. Feeling adventurous? Once you’ve mastered this version, don’t be afraid to experiment! I’m going to add almond butter to my next batch 🙂

One Pot Chicken and Kale

August 17, 2015 By Shannah Coe 9 Comments

One pot meals are my favorite. They really make it easy to get dinner done without a lot of dishes to clean up in the aftermath. On a lot of weeknights, I end up being the one to get the dishes in the dishwasher so I appreciate any little bit of help I can get. My favorite dish right now is paleo one pot chicken and kale.

Spinach Artichoke Turkey Sandwich

August 13, 2015 By Shannah Coe 8 Comments

I am excited to work with Sara Lee® Bread to bring you this recipe and fun idea for school lunches. While this post was sponsored, all thoughts and opinions are my own.

In just a few short weeks we will be headed back to school. It means lots of activities, homework and of course, back to packing lunches each day. I do my best to change up what the kids get in their lunches so they actually want to eat them. One of my newest sandwiches for lunches is a spinach artichoke turkey sandwich.

Ok, you guys…I am about to give you the easiest and most delicious weeknight meal you can make. A bonus: it is paleo too {if you care about that kind of thing}! Seriously, I make this on Sundays and then I grab a little for breakfast with a poached egg or Mathlete will have it for dinner with rice {yes, we still keep rice in our mostly paleo kitchen} when I am gone. Spicy Italian Macaroni and Cheese

May 15, 2015 By Shannah Coe 9 Comments

I am excited to partner with DairyPure milk to bring you this new recipe. While this post was sponsored, all thoughts and opinions are my own.

We love mac & cheese in our house. I don’t get to make it from scratch as often as I like but I try to make a big batch and then freeze it for later use at least once per month. Since we eat it a lot, I like to try and change it up from time to time and go beyond a basic macaroni and cheese. Recently, I wanted to make some that was geared a little more to the adults in our house and created spicy Italian macaroni and cheese.
