Spinach Artichoke Turkey Sandwich

August 13, 2015 By Shannah Coe 8 Comments

I am excited to work with Sara Lee® Bread to bring you this recipe and fun idea for school lunches. While this post was sponsored, all thoughts and opinions are my own.

In just a few short weeks we will be headed back to school. It means lots of activities, homework and of course, back to packing lunches each day. I do my best to change up what the kids get in their lunches so they actually want to eat them. One of my newest sandwiches for lunches is a spinach artichoke turkey sandwich.

Sandwiches are the perfect lunch for school. We start ours with Sara Lee® Bread and add different yummy fillings like turkey or ham. With 18 different varieties of bread, we never have to worry about anyone getting bored with one type. This sandwich came about because my daughter discovered she loved spinach artichoke dip. Since she already loved turkey sandwiches, I figured they’d make a perfect pairing for her lunchbox. At home, we toast the bread a little but, for her lunches, we leave it untoasted.

Spinach Artichoke Turkey Sandwich

2 slices Sara Lee® Bread
1 Tbsp spinach artichoke dip
2 slices deli turkey
1 slice Swiss cheese
1-2 pieces of lettuce

Let’s Make It:

1) Spread spinach artichoke dip on one side of one piece of bread. Top with turkey, cheese and lettuce. Add other piece of bread. Enjoy.

If you choose to toast the sandwich, simply spread 1 Tbsp of butter on the outside of the sandwich and grill in a pan over medium heat until golden brown.

In addition to delicious lunch, I like to send little pieces of home in the lunches I pack. This ranges from little notes scribbled on napkins to printable lunch box jokes. I recently found the Sara Lee® Loveable Lunch Notes website where they share printable lunch box notes that are perfect for sneaking into the lunches I pack for the kids. My kids love finding notes in their lunches and these printable lunch notes make it fun and easy for me to include them each day. For the next six weeks, they will release a set of notes each week for a total of 30 in all. Be sure to visit and download each set!

What are some of your favorite lunchbox recipes? Do your kids love finding little notes in their lunchbox from you?
