1 Ingredient Banana Ice Cream

August 18, 2015 By Jenna Shaughnessy 1 Comment

1 Ingredient Banana Ice Cream

I’ve recently cut out all refined sugar from my diet. Once I set my mind to it (and saw the lbs start to drop off!) it was easier than I had initially thought. But, it’s summer, and I would still like to enjoy an ice cream every so often.
I’ve seen this recipe for 1 ingredient banana ice cream on Pinterest for a while now and have been dying to give it a try. I wasn’t sure that it would really taste like ice cream but BOY was I wrong! It’s also a great way to use up those over-ripe bananas…there’s only so much banana bread you can eat!

This couldn’t be easier to make: You want to use 4 or 5  over-ripe bananas (the browner they are, the sweeter the ice cream will  be!).

1 ingredient banana ice cream

Peel them and slice. Place the slices on a plate and freeze overnight. Then, all you have to do is blend them up in  food processor/blender until thick and creamy!

Now, in the spirit of being sharing, I’m going to let you know that I froze my bananas whole with the skins still ON. Don’t do this, they are impossible to peel once they are frozen!! You could peel first, then freeze but I reckon slicing them up first would make the process a whole lot easier.

If you want to serve it right out of the blender, expect a “soft-serve” consistency. To make it a bit more solid, pop in a freezer-proof container and chill for at least 2 hours.

Who knew that pureed frozen bananas were so thick and creamy!? Honestly, if you love ice cream and bananas then you will adore this. It’s Paleo friendly, dairy free, (added) sugar free and a great guilt-free treat for both kids and adults alike. Feeling adventurous? Once you’ve mastered this version, don’t be afraid to experiment! I’m going to add almond butter to my next batch 🙂

Salted Pretzel Ice Cream Bites

May 8, 2015 By Shannah Coe 12 Comments

This is a sponsored post written by me on behalf of Safeway, Inc.. All opinions are 100% mine.

Do you love ice cream? Who doesn’t, right?! I am a huge ice cream fan and haven’t really met many flavors that I don’t like. Anything with peanut butter in it is a winner for sure. I was trying to decide on a fun ice cream treat to make with my daughter and stumbled upon some Edy’s® Peanut Butter Cup Frozen Custard. Now, I could have eaten it alone but we decided it would be fun to use some salted pretzel snack bars to make salted pretzel ice cream bites.

Dark Chocolate Frozen Yogurt Bites

January 27, 2015 By Shannah Coe 10 Comments

We keep a pretty hectic schedule around here which means I don’t get a ton of time to myself. It also means that treats and sweets are typically shared at least 3 ways. I love my kids and family but sometimes a little “me” time is definitely in order. I am also trying to really watch what I eat and limit high sugar sweets though. The frozen yogurt bites we typically make are a HUGE hit with the kids so I decided to try making some dark chocolate frozen yogurt bites which are perfect for me!

Thin Mints® Ice Cream Pie

July 2, 2014 By Shannah Coe 18 Comments

SoFab Disclosure

Every January, our house gets so excited because it is Girl Scout cookie time.  By the end of the month, we are all out of the delicious cookies and it is sad faces all around.  While shopping in Walmart the other day, I discovered THE BEST thing in the check out aisle. NESTLÉ® CRUNCH® Girl Scouts® Candy Bars which totally allows us to get our Girl Scouts® cookie fix even though it isn’t cookie season.  I totally grabbed all of the Thin Mints® bars they had in the aisle and brought them home. We usually freeze our cookies to get them nice and cold but I decided to make Thin Mints® Ice Cream Pie with the candy bars instead.

This dessert is the BEST thing for summer. Love the idea of creating Thin Mint flavored ice cream pies. #Cookies2Crunch #shop #cbias

Almond Coconut Milkshake

June 23, 2014 By Shannah Coe 11 Comments

Collective Bias Disclosure

Summer is here and that means we are all turning to cooler foods and drinks to help beat the heat. One of my favorite desserts in the summer is a milkshake. Milkshakes are so delicious and can be made in so many different ways. We were all talking about our favorite candy bars the other day and I decided to try and make a milkshake to mimic one of Mathlete’s favorite. Creating this almond coconut milkshake was fun and was so easy thanks to Silk Almond Coconut blend that I used to get a really delicious coconut flavor. {Hint: search #collectivebias and #SilkAlmondBlends for even more almond milk recipes}

The Ultimate in No Bake Desserts – Ice Cream Pizza

June 5, 2013 By Shannah 26 Comments

Thank you to Kizmos for providing some cook’s tools for use in creating this recipe and as a giveaway prize for my readers.  All opinions and thoughts expressed here are my own.

It is H-O-T outside.  With the heat comes the desire to avoid cooking anything…especially if it means turning on an oven.  BUT, summer also brings a lot of picnics, BBQs and get togethers so I bet you’re often still on the hook for a dessert.  How about making the ultimate in no bake desserts: an ice cream pizza?
