Thin Mints® Ice Cream Pie

Every January, our house gets so excited because it is Girl Scout cookie time.  By the end of the month, we are all out of the delicious cookies and it is sad faces all around.  While shopping in Walmart the other day, I discovered THE BEST thing in the check out aisle. NESTLÉ® CRUNCH® Girl Scouts® Candy Bars which totally allows us to get our Girl Scouts® cookie fix even though it isn’t cookie season.  I totally grabbed all of the Thin Mints® bars they had in the aisle and brought them home. We usually freeze our cookies to get them nice and cold but I decided to make Thin Mints® Ice Cream Pie with the candy bars instead.

Now, these candy bars are only available for a limited time so you will want to go buy them from Walmart like right now because they will gone at the end of the summer. I found mine near the checkout aisle on one of the side shelves.

Once I got home, I waited for dessert time to surprise my family with this super fun dessert featuring the NESTLÉ® CRUNCH® Girl Scouts® Candy Bars in our favorite cookie flavor. I made them into little mini pies so each person got their own.

These mini pies were a huge hit! I am glad I bought a bunch of extra candy bars too because I found my daughter searching for some in the snack cabinet the next day.

    Incredible recipe! I am on a Thin Mints kick right now (and really, I can’t think of a time when I couldn’t go for some Thin Mints!) and actually had Breyer’s Blasts Thin Mint ice cream last night. So so good!

    Oh how I wish I could eat this right now! I am pregnant and have gestational diabetes so I can’t eat sweets until baby decides to come out, but man this looks good. I wrote the recipe down for later!
