Sausage and Pepper One Pot Pasta Recipe

In my dreams, summer is a time to slow down and relax.  Days are spent lounging by the pool and nights are spent with delicious dinners on the deck. I’m a good dreamer, right? Reality is far different around here. Gymnastics practices are longer, camp carpools are added into the mix and getting dinner on the table becomes so much harder.  Oh, add the heat into that mix and turning on an oven or stove and cooking just loses its luster. That is where the beauty of something like this sausage and pepper one pot pasta comes into play.  It is one pot and a meal that cooks in under thirty minutes. Sound too goo to be true? Well,  you definitely aren’t dreaming ๐Ÿ™‚

One pot is all this recipe takes to make an amazing pasta dish the whole family will love.

I was first introduced to the awesomeness that is one pot pasta by my friend Allyson. She couldn’t believe I hadn’t tried it and pretty much forced me  {well, as much as someone several states away can force someone} to add it to my menu plan for the week. I was SO glad I did because I was immediately in love.

Sausage and Pepper One Pot Pasta

Ingredients

  • 16 oz linguine
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  • 2 links Italian sausage sliced
  • 2 tsp oil
  • 4 cloves garlic
  • 1 can fire roasted diced tomatoes
  • 1/3 cup fresh basil
  • 3 Tbsp fresh oregano chopped
  • 4 1/2 cups water or broth
  • 1/4 cup grated or shredded Parmesan cheese {optional}

Instructions

  • In a large pot, combine all ingredients except 1-2 leaves of basil and Parmesan cheese. Bring to a boil.
  • Reduce heat and simmer for 20-25 minutes. Top with grated Parmesan cheese and reserved basil.

Notes

You can any pasta that cooks in the 11-13 minute time range like linguine.
I use a combination of water and broth for extra flavor.

When I make this recipe, I usually use a combination of broth and water to add some extra flavor. I have also been known to change up the pasta when I don’t have linguine on hand. This is totally one of those use what you have on hand type recipes which makes it even better in my book.

Now I don't have to spend a ton of time in the kitchen to make a yummy dinner. This sausage and pepper one pot pasta is perfect for our family.

  1. ONE POT PASTA FTW!!! Woo! I am so happy you tried it and made your own variation! I will say, I did try making it with thin spaghetti one day, and it did not turn out well, so I would avoid that pasta variation if possible!
