Buffalo Shrimp Tacos

Buffalo chicken gets a ton of rotation in our house.  I love all of the flavors and of course chicken is always a big hit.  But, I was searching for something different the other night and decided to change it up and make buffalo shrimp tacos in place of our regular chicken version.

One of the great things about the start of May is Cinco de Mayo!  If you follow me on Instagram, you probably notice a trend on Friday evenings: margaritas and guacamole.  We have a great little Mexican restaurant in our neighborhood that we go to just about every Friday night.  Clearly, we love Mexican food 😉

Chicken Tamale Casserole

Chicken Enchilada Stuffed Peppers Recipe

Make a healthier take on a Tex-Mex favorite with this Chicken Enchilada Stuffed Peppers recipe filled with chicken, beans, vegetables & melted cheese!

 
I was so happy with how this recipe turned out that I wanted to share it here with you all as well.  The idea for this recipe came about because of my husband’s love of enchiladas and my desire to be a little healthier in the way I eat.  Chicken Enchilada Stuffed Pepper
 
We won’t call it clean eating because I am far from perfect when it comes to that. This is really just more a focus on increasing our vegetable intake when possible. I created a Chicken Enchilada Stuffed Peppers recipe by substituting peppers for traditional tortillas in this recipe.
 
This is the best chicken enchilada recipe because it allows me to enjoy these shredded chicken enchiladas without feeling like I am piling on the carbs and calories! This stuffed bell peppers recipe is filled with so much deliciousness but they are pretty healthy too thanks to all of the vegetables!

Bang Bang Shrimp Taco Boats

I am a total sucker for Bang Bang shrimp from Bonefish Grill, so I decided to create Bang Bang Shrimp Taco Boats that I can throw together at home easily!

I live under a rock.  Not really because you’ve obviously seen pictures of my house.  BUT, it wasn’t until about 3-4 months ago that I had my visit to Bonefish Grill.  Honestly, that visit didn’t go so well and I probably wouldn’t have gone back had I not tried the Bonefish Grill bang bang shrimp {and thanks to some very helpful managers who made up for the issues}.

Cinco de Mayo Recipes: Turkey Cilantro Burgers with Tomatillo Sauce

So, I was born in a Virginia…rural Virginia…where fried chicken, corn on the cob and biscuits rule.  Sweet tea…it was my equivalent to milk/juice most kids drink.  I didn’t have sushi or a million other “ethnic” foods until I was well into my teens.  There were definitely no Cinco de Mayo recipes made in our house growing up either!

BUT, I am convinced my mother must have lived in Texas or Mexico for some portion of her pregnancy because my love of Tex-Mex and Mexican food runs deeps.  Like…I’ll drive an hour each way in traffic to get to my favorite Mexican restaurant without so much as a complaint.  Once I started to fall in love with cooking, it is all Tex-Mex…all.the.time.   Hence the reason, I felt the need to take a traditional “American” dish and take it South {and a little West}.

Homemade Bacon Guacamole

Guacamole is just one of those dips that no one can resist! Add some bacon to your guacamole recipe to make some Homemade Bacon Guacamole and ensure the bowl gets emptied every time!

To a lot of people, there isn’t much that you can do to guacamole to make it any better than it already is. It’s perfectly creamy, tangy and spicy all mixed into one bowl. What else could you want?!

Turkey Taco Cups

Every month, a group of parents from H’s old preschool get together for a dinner club. It is always a great time and everyone brings really delicious food.

We hosted last month and one of the families brought these super delicious taco cups.  Everyone was raving about them. I didn’t think about getting the recipe at the time but decided to try and create them on my own a few days later.  These turkey taco cups are sure to be a favorite in your house.
