Braised Pork Sandwich with Jicama Kale Slaw

Father’s Day is in just a few weeks. I’ve been trying to decide what to do for Mathlete {besides sending him off flying for the day} and I instantly thought of a picnic. We did one at a local winery for Mother’s Day and it was great. One of our wineries has also opened a brewery on the property and I know Mathlete would love checking out some of the beers they offer. Of course, if we are going on a picnic, we are going to need food to take. I wanted to skip our regular choices {like balsamic chicken sandwiches} and I saw some braising sauces made with craft beers at a recent shopping trip and instantly knew I wanted to make a braised pork sandwich with jicama kale slaw.

During spring and summer, we love to get together with friends for weekend brunch a lot. Heading outside during the nice morning weather for a meal together is one of our favorite ways to reconnect and just have some relaxation time in the midst of the hustle and bustle of shuttling kids to activities and taking ourselves back and forth to work.

Basketball fever is in full effect! It is almost impossible to go somewhere and not hear people talking about the latest game or see it on TV. In our office, brackets are always the topic of the day. Garlic and Herb Pork Kabobs

We are coming down to the last days of the regular grilling season and I am trying to squeeze in every chance to grill that I can. Of couse, my available cooking time is almost nonexistent right now so I need things that can cook fast and don’t require a lot of marinade time or prep work. That is one of the reasons I love the Smithfield marinated pork products…they do all the work for you. I recently picked up one of the garlic and herb tenderloins and brought it home to grill for dinner.
