Thai Zucchini Noodle Salad

Let’s talk zoodles…you know, noodles made out of zucchini. I got a spiralizer back when I started Whole30 and I fell in love. Zoodles are a great noodle replacement and, with such a mild flavor, you can put them into just about anything. This week, I am in New York for two conferences so my menu planning definitely needs to be quick and easy. That is one of the reasons I love our meal plan full of easy dinner recipes. I don’t even have to think about what to make but just pull the recipes and make my grocery order. Southwestern Turkey Burger

Summer is in full swing here. Our temperatures range from the mid-70s all the way up to almost 100. No matter what the temperature outside, we are always up for firing up the grill to cook dinner. Burgers are one of our favorite things to cook on the grill. While a good beef burger is always a winner, we tend to stray a little from the standard burger fare and opt for something like a chicken apple burger or a southwestern turkey burger.  They are so good hot off the grill and topped with a slice of melted VELVEETA® loaf.
