You can make the patties and freeze them for cooking later too making them perfect for using up all the extra zucchini at the end of the season. That way you can also enjoy these great zucchini patties all year long too.
These taste so good. You could even scoop them into balls and use them as meatballs too. They would make an amazing appetizer for parties. No one will even guess that they are a paleo zucchini recipe either.

Looks delicious!
Mine are a little sloppy any tips to bind them
I would try squeezing more water out of the zucchini and possibly switching to an egg yolk vice a full egg.
I will definitely try this looks amazing.
Thanks! These are one of my new favorite items to make for whole30!

Congratulations! Everyone loved this post at the Create & Share Link Party—it was the most clicked this week!! 😀
Such a flavorful recipe!
this look soooo good! Do these freeze beautifully?
Yes! I have frozen them uncooked and then thawed before cooking. Not sure how they would do straight from freezer to cooking.
I wonder if I can use turkey ground meat instead of chicken for the fritters.?
Absolutely!
I’m making this tonight as I have the insides of stuffed zucchini I want to use up. But I have the stuffing of like 10. How much measurement wise would I need?
My apologies that I am just seeing this! I would say 1 1/2 – 2 cups measurement wise would work.
Hi there – how many fritters approx does this make? Cooking for a family of 3 adults and 2 children tonight, will this be enough?
I am so sorry for the delay in getting back to you! This did not come into my email until today. It is probably too late but I did want to answer your question. I would make 1.5 of the recipe just to make sure. For the adults, they may want to eat more than 1 and that way, you would have plenty.
