By the time my kids get home from school, they are usually starving and immediately start asking for snacks. I try to make sure I have a variety of snacks around the house and always choose things that are pretty easy to take on the go too in case we have to head out immediately for gymnastics practice or some other event. Queso one pot pasta is a quick and easy weeknight meal that the entire family will fall in love with at first bite. When you only need a few ingredients, one pot and less than 30 minutes to get dinner done, you know you’ve found one of the best one pot pasta recipes!

Weeknights get hectic once school begins. Between after school activities, homework and everything else, dinner needs to be quick and easy. Of course, we also want something delicious too. It is nights like those that one pot pasta meals are the perfect solution.

Pesto and Sun Dried Tomato Tuna Salad

Tuna salad is one of those great go to lunch ideas because it is full of protein to help you make it through the day and tastes great. It also makes the perfect after school snack when the kids come home complaining they are so hungry. I created this pesto and sun dried tomato tuna salad to change up my typical version and cut out a lot of the unhealthy items that typically go into a tuna salad. 

Tuna salad is the perfect lunch or after school snack option! Opt for this version which has zero mayo and is full of amazing flavor.

We have to face it. The first day of school is coming. For some of us, that may be a good thing and for others it may be something that we aren’t looking forward to so much. I am somewhere in between. Going back to school sets us into a predictable routine but it also brings a TON of extra activities that we don’t have to fit in during the fun, summer months.
