Queso one pot pasta is a quick and easy weeknight meal that the entire family will fall in love with at first bite. When you only need a few ingredients, one pot and less than 30 minutes to get dinner done, you know you’ve found one of the best one pot pasta recipes!

Weeknights get hectic once school begins. Between after school activities, homework and everything else, dinner needs to be quick and easy. Of course, we also want something delicious too. It is nights like those that one pot pasta meals are the perfect solution.

Queso One Pot Pasta is an easy and delicious meal that is virtually hands off for the cooking time leaving your free to take of all the other busy weeknight stuff.

Easy one pot meals are the saviors of busy cooks everywhere. For parents, they give them that extra bit of time to help the kids finish up that tricky homework problem or get a jump start on packing lunches for the next day. Basically, they make dinner possible amid all the other crazy stuff going on in the house because they are largely hands off.

One pot pasta meals, like this queso pasta, are the perfect addition to your one pot meal recipe collection. Since it is ready in under 30 minutes and requires very little hands on cooking, you’ll have plenty of time to get all the other chores done.

My family adored this pasta. It has all the makings of a cheeseburger macaroni style dish but with a Tex-mex flair. When choosing a pasta shape, be sure to keep it small like elbow macaroni or you will need to increase the cooking time.

This one pot meal is the perfect way to use pantry staples like canned vegetables and beans to create a fresh tasting delicious meal. Plus, it only leaves you one pot to clean!

Queso One Pot Pasta

Queso one pot pasta is a quick and easy dinner recipe that is ready in less than 30 minutes! With only pot, it also makes clean up a snap.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 Tbsp garlic powder
  • 1 Tbsp taco seasoning
  • 2 1/2 cups macaroni pasta
  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned mexicorn, drained
  • 1 canย canned diced tomatoes with chiles
  • 1 cup salsa
  • 2 cups water or broth
  • 1 cup queso dip
  • 1 cup shredded queso cheese

Instructions

  • Heat pan over medium heat. Add ground beef and cook, stirring to crumble, for 3-5 minutes. Add onion, garlic powder and taco seasoning. Cook for an additional 3 minutes.
  • Stir in macaroni through broth. Bring to a boil and then reduce heat to simmer. Cover and simmer for 15 minutes. Remove from heat and stir in queso dip and shredded cheese. Cover and let sit for 1-2 minutes until cheese has melted. Serve topped with sliced avocado.
