One Pot Southwest Alfredo

Short on time to make dinner but still want something that is bursting with flavor and is ready super fast? This one pot Southwest Alfredo recipe is just the simple, easy to make and super delicious recipe you need. I guarantee everyone will be asking for seconds.

One Pot Southwest Alfredo

This one-pot pasta dish is the perfect mix of rigatoni pasta and ground Italian sausage. At home, I had dinner on the table in under 30 minutes which is perfect for our busy weeknights. Plus, this dish costs under $10 total but still uses delicious, quality ingredients like Italy’s #1 brand of pasta and sausage that has all the spices and flavors built right in.

Ingredients for One Pot Southwest Alfredo:

1 lb Johnsonville Ground Italian Sausage
12 oz Barilla Rigatoni
1 1/2 cup water
1 1/4 cup milk
1/2 cup heavy cream
1/2 cup grated Parmesan
1 cup black beans, rinsed and drained
1 cup corn
1 red pepper, diced
1 green onion, sliced

Let’s Make It: 

1. Heat a large pan over medium heat. Add Italian sausage and cook, stirring to crumble, for 5-7 minutes. 

2. Stir in pasta, water, milk and heavy cream. Bring to a boil and then reduce to simmer. Cover and simmer for 10 minutes, stirring frequently. Stir in black beans, corn and red pepper. Cook for an additional 2 minutes. 

3. Remove from heat and stir in grated Parmesan cheese. Top with sliced green onions before serving.
