This roasted strawberry baked brie never fails to impress.ย The gooey baked brie is topped with juicy honey balsamic roasted strawberries, and garnished with chopped pistachios and fresh thyme leaves.
I love brie and definitely can’t resist it when it is baked to gooey perfection. This delicious brie recipe with roasted strawberries is a perfect holiday party appetizer or shared entree for cheese lovers.

Baked brie is a great way to take a value priced brie and elevate it into spectacular brie. Topping it with roasted strawberries, chopped pistachios, and fresh thyme sends an already delicious cheese out of the stratosphere.

What do you need to make baked brie?

- Strawberries – Fresh strawberries are ideal for this recipe but you could substitute frozen strawberries instead. If using frozen strawberries, there is no need to thaw them before roasting.
- Olive oil – Use a good quality extra virgin olive oil.

- Balsamic vinegar – While ordinary balsamic vinegar was used in this recipe, white balsamic vinegar can also be used, and will help the strawberries retain their vibrant color.

- Thyme leaves – The fresh thyme leaves could be substituted with chopped fresh mint or basil.

Ingredients
- 1 pound fresh strawberries halved
- 2 teaspoons olive oil
- 1 teaspoons honey
- 1/4 teaspoon balsamic vinegar
- 8 ounce wheel of brie
- 2 tablespoons roughly chopped pistachios
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius.
- Combine the halved strawberries, olive oil, honey and balsamic vinegar in a 9 x 13 inch baking dish.ย Place the baking dish in the preheated oven and bake for 10-15 minutes, or until the strawberries have softened, but still retain their shape.ย Set aside to cool slightly.1 pound fresh strawberries, 2 teaspoons olive oil, 1 teaspoons honey, 1/4 teaspoon balsamic vinegar
