Pineapple Ginger Mimosa

Mimosas are one of the most classic brunch cocktails ever. While I will never turn down the quintessential orange juice and champagne combo, I love something a little different like this Pineapple Ginger Mimosa. With a slight sweetness thanks to the pineapple juice and refreshing ginger, you can’t go wrong serving this pineapple cocktail at your next brunch!
Break away from the standard orange juice mimosa and make this delicious {and easy} Pineapple Ginger Mimosa for your next brunch or girl’s night. This pineapple cocktail will still satisfy all of your mimosa needs, they are just as delicious!
I first tasted the drink this recipe is inspired by at our local pizza place when we were there for an early lunch. I was instantly in love and knew I was going to have to recreate it at home. I talked to the bartender and they use a combination of ground dried ginger, fresh ginger and crystallized ginger.
I tried to make this pineapple mimosa recipe as simple as possible while still capturing as much of the flavor from the original.
Mathlete is a huge pineapple fan so we always keep pineapple juice at the house. With only three ingredients, this mimosa is definitely one that you can easily whip up on short notice. Plus, I love it because it is a fun departure from the normal orange juice and champagne that can get a little boring.
I typically use a drier Champagne or sparkling wine so the mimosa isn’t too sweet. If you prefer your cocktails on the sweeter side, swap out the Champagne for prosecco instead.
I use dried pinepple pieces as a garnish. If you have crystallized ginger in the pantry, you could also garnish the glass with that for fun! Or, drop it into your mimosa for some added ginger flavor!

What you’ll need for this recipe:
Ingredients
- 32 oz pineapple juice
- 1 large piece fresh ginger peeled
- 1 bottle Champagne or Prosecco
- Dried pinepple pieces for garnish
Instructions
- 1. In a pitcher, combine pineapple juice and fresh ginger. Refrigerate for 15-30 minutes; up to overnight. Discard ginger.
- 2. Fill champagne glasses 1/3-1/2 the way with pineapple juice. Top with Champagne and garnish with dried pineapple.
