This vegetarian sandwich is great because it holds up really well in the cooler or picnic basket until you are ready to enjoy it. Plus, it has lots of flavors you find in a green goddess salad making it super delicious.
This sandwich uses a mix of Wellsley Farms herbed goat cheese and a homemade green goddess dressing recipe to give it a huge flavor punch that works so perfectly with the fresh vegetables.
What is green goddess dressing? It is a salad dressing that usually contains mayonnaise, sour cream, chervil, chives, anchovy, tarragon, lemon juice, and pepper. I use this homemade green goddess dressing recipe but you can easily pick one up from BJ’s Wholesale Club while you are shopping for your other ingredients.
As with most vegetarian sandwich recipes, there isn’t really a “recipe” to go with it but more a collection of ingredients that are combined to create the most delicious veggie sandwich you might ever have! Below is a photo tutorial on how I put together my vegetable sandwich.
Of course, you can change the layers up any way you like or omit any vegetables you may not like!

A delicious veggie sandwich topped with a homemade green goddess dressing. This sandwich is a super tasty vegetarian sandwich option!
- 4 slices oatmeal or other seeded bread
- 2 oz Wellsley Farms herbed goat cheese room temperature
- 1/2 hot house cucumber thinly sliced
- 1 avocado sliced
- 2 Tbsp lemon juice
- 1/2 cup alfalfa sprouts
- 1/2 cup Wellsley Farms baby spinach
- 1 cup mayonnaise
- 3/4 cup minced scallions
- 1 cup basil leaves
- 4 Tbsp fresh parsley
- 1/4 cup lemon juice
- 2 cloves garlic minced
- 2 tsp anchovy paste
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1/2 avocado

In a food processor, combine mayonnaise through avocado for the dressing. Turn on to combine. Transfer to container and store in refrigerator until ready to use.

Toss avocado slices with 2 Tbsp lemon juice.

Spread softened goat cheese on one side of two slices of bread. Top with sliced cucumbers, sliced avocado, alfalfa sprouts and baby spinach.

Spread one side of the remaining two slices of bread with the dressing from step 1. Place, dressing side down, on top of the baby spinach. Enjoy!
