A delicious veggie sandwich topped with a homemade green goddess dressing. This sandwich is a super tasty vegetarian sandwich option!

Ingredients

  • 4 slices oatmeal or other seeded bread
  • 2 ounces herbed goat cheese room temperature
  • 1/2 hot house cucumber thinly sliced
  • 1 avocado sliced
  • 2 Tablespoons lemon juice
  • 1/2 cup alfalfa sprouts
  • 1/2 cup baby spinach

Green Goddess Dressing

  • 1 cup mayonnaise
  • 1/4 cup chopped scallions
  • 1 cup basil leaves
  • 4 Tablespoons fresh parsley
  • 1/4 cup lemon juice
  • 2 cloves garlic minced
  • 2 teaspoon anchovy paste
  • 2 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1/2 avocado

Instructions

Green Goddess Dressing

  • In a food processor, combine mayonnaise through avocado for the dressing. Turn on to combine. Transfer to container and store in refrigerator until ready to use.
    1 cup mayonnaise, 1/4 cup chopped scallions, 1 cup basil leaves, 4 Tablespoons fresh parsley, 1/4 cup lemon juice, 2 cloves garlic, 2 teaspoon anchovy paste, 2 teaspoon kosher salt, 1 teaspoon ground black pepper

Sandwich

  • Toss avocado slices with 2 Tbsp lemon juice.
    1/2 avocado, 2 Tablespoons lemon juice
  • Spread softened goat cheese on one side of two slices of bread. Top with sliced cucumbers, sliced avocado, alfalfa sprouts and baby spinach.
    4 slices oatmeal or other seeded bread, 2 ounces herbed goat cheese, 1/2 hot house cucumber, 1 avocado, 1/2 cup alfalfa sprouts, 1/2 cup baby spinach
  • Spread one side of the remaining two slices of bread with the dressing from step 1. Place, dressing side down, on top of the baby spinach. Enjoy!
