Say hello to your new favorite salad! This strawberry spinach salad is tossed with a creamy poppyseed dressing, roasted pecans, and goat cheese for a perfect summer meal.

This summer salad starts with a base of spinach and is topped with crunchy, toasted pecans and then tossed with the a creamy poppyseed salad dressing. This makes for a tasty, light lunch or a great salad to bring to a party.

  • Baby Spinach
  • Arugula – I love using baby arugula but regular arugula would work great too.
  • Fresh Strawberries
  • Red onion
  • Crumbled Cheese – Goat cheese is my favorite here but you could also use crumbled feta.
  • Roasted, Salted Pecans
  • Creamy Poppyseed Dressing

How to Make Strawberry Salad

  1. Add the greens to a large bowl.
  2. Add strawberries, pecans, onions, and cheese.
  3. Toss ingredients together.
  4. Add dressing and toss again to coat the salad. Serve.

Salad Variations

There are many options to changing up this salad. You can add protein like grilled chicken or salmon. You can change the dressing to a vinaigrette style dressing. You can even change the fruit or additional fruit such as blueberries or raspberries. Swap out the salted pecans for candied pecans or walnuts.

Ingredients

  • 2 cups baby spinach
  • 2 cups arugula
  • 1 cup fresh strawberries hulled and halved
  • ยผ cup red onion thinly sliced
  • โ…“ cup crumbled goat cheese
  • ยผ cup roasted pecans
  • 2/3 cup poppyseed dressing

Instructions

  • In a large mixing bowl, combine the spinach and arugula, gently tossing until evenly mixed.
    2 cups baby spinach, 2 cups arugula
  • Add your desired toppings, distributing them throughout the salad. Since some toppings may be heavier and settle at the bottom, be sure to toss thoroughly, scraping the bottom of the bowl to ensure even distribution.
    1 cup fresh strawberries, ยผ cup red onion, โ…“ cup crumbled goat cheese, ยผ cup roasted pecans
  • Drizzle with poppyseed dressing, coating the greens and toppings lightly and evenly.
    2/3 cup poppyseed dressing
  • Serve immediately and enjoy!

Notes

  • You can prep all of the ingredients ahead of time. Then, mix immediately before serving. 
  • You can use the mix of spinach and arugula or change to all spinach for a less peppery base.
