Cucumber Watermelon Salad

No one wants to turn on a stove or oven during the hot summer months. Skip the hot meals and make cucumber watermelon salad instead. 

When the temperature is nearing 100, the last thing I want to do is heat up the house with a stove or oven. I keep my house cool and get a tasty, light meal when I make a quick salad like this cucumber watermelon salad. Plus, it uses the best of summer produce!

Up until recently, I’d never made cucumber noodles. But, I love playing around with my spiralizer and decided to try and make them one night. So easy and they are perfect for this salad.

We buy a watermelon almost every week during the summer months. Sometimes the kids don’t eat as much as usual so I look for delicious ways to use it. Here it is combined with a few simple ingredients for a tasty salad.

I use a combination of mint and basil for the salad. Feel free to use just one if you prefer.

I prefer crumbled goat cheese in this cucumber watermelon salad. But, feta is also equally great with these flavors.

Ingredients

  • 2 small cucumbers spiralized
  • 1 1/2 cup watermelon chunks
  • 1/4 cup crumbled goat cheese
  • 1/4 cup balsamic vinaigrette
  • 2 Tablespoons fresh mint chopped
  • 2 Tablespoons fresh basil chopped

Instructions

  • In a large bowl, combine cucumber noodles, watermelon chunks, and goat cheese.
    2 small cucumbers, 1 1/2 cup watermelon chunks, 1/4 cup crumbled goat cheese
  • Toss salad with balsamic vinaigrette. Top with mint and basil.
    1/4 cup balsamic vinaigrette, 2 Tablespoons fresh mint, 2 Tablespoons fresh basil

Notes

Crumbled feta can be substituted for the crumbled goat cheese.
