It is baking season! I get so excited once the holidays hit because my kitchen is always busy with some kind of cooking or baking going on. Right now, we are baking Red Velvet Cake Mix Cookies for the upcoming Girl Scout bake sale my daughter is participating in.ย
I always say that cake mix cookies are super secret way to make cookies because absolutely no one would guess that they were made with cake mix as the base! They aren’t cake like AT ALL.

Ingredients for Red Velvet Cookies
- Cake Mix – Pick up a box of your favorite red velvet cake mix.
- Eggs – The recipe uses two (2) large eggs. Make sure they are at room temperature before mixing for the best results.
- Vegetable Oil – Any brand of oil will do so use what you have on hand.
- M&Ms or other add-ins – I use holiday M&Ms in my cookies but you can easily replace them with white chocolate chips or leave them out.

Can I freeze the cookie dough or the baked cookies? Yes, the dough balls can be frozen for up to 3 months. You can bake them from frozen by adding 2-3 minutes to their baking time. Baked cookies can be frozen too. Simply thaw them on the counter when you are ready to enjoy them.
Can I make these with gluten free cake mix? I have no tested the recipe using a gluten free cake mix. However, I *think* it should work but may need slight modifications to the cooking time.

Red Velvet Cake Mix Cookies
Ingredients
- 1 box Red Velvet Cake Mix
- 2 Eggs
- 1/3 cup Vegetable Oil
- 1/3 cup Red & Green M&Ms
Frosting (Optional)
- 1 cup Butter softened
- 3 cups Powdered Sugar
- 3 tablespoons Milk
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
- In a large bowl, combine the vegetable oil and eggs. Mix until well combined. Stir in cake mix and mix well. Fold in M&Ms.1 box Red Velvet Cake Mix, 2 Eggs, 1/3 cup Vegetable Oil, 1/3 cup Red & Green M&Ms
- Drop rounded tablespoons of dough onto the prepared baking sheets.
- Bake in preheated oven for 8-10 minutes. Remove from oven and allow to cool on the baking sheet for 1-2 minutes. Transfer to wire rack to cool completely.
Frosting
- Beat the softened butter until smooth. Working in batches, mix in powdered sugar, allowing each to fully incorporate before adding more. Add milk 1 Tbsp at a time until frosting is desired consistency. Spread on cooled cookies and top with additional M&Ms or sprinkles if desired.1 cup Butter, 3 cups Powdered Sugar, 3 tablespoons Milk
Notes
- Cookie dough can be frozen for up to 3 months. Bake dough balls from frozen and add 2-3 minutes to baking time.
- If not frosting the cookies, dusting with powdered sugar is another option.
- White chocolate chips can be substituted for the M&Ms.
