Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
In a large bowl, combine the vegetable oil and eggs. Mix until well combined. Stir in cake mix and mix well. Fold in M&Ms.
1 box Red Velvet Cake Mix, 2 Eggs, 1/3 cup Vegetable Oil, 1/3 cup Red & Green M&Ms
Drop rounded tablespoons of dough onto the prepared baking sheets.
Bake in preheated oven for 8-10 minutes. Remove from oven and allow to cool on the baking sheet for 1-2 minutes. Transfer to wire rack to cool completely.
Frosting
Beat the softened butter until smooth. Working in batches, mix in powdered sugar, allowing each to fully incorporate before adding more. Add milk 1 Tbsp at a time until frosting is desired consistency. Spread on cooled cookies and top with additional M&Ms or sprinkles if desired.
1 cup Butter, 3 cups Powdered Sugar, 3 tablespoons Milk
Notes
Cookie dough can be frozen for up to 3 months. Bake dough balls from frozen and add 2-3 minutes to baking time.
If not frosting the cookies, dusting with powdered sugar is another option.
White chocolate chips can be substituted for the M&Ms.
