Peppermint Chocolate Cake Mix Cookies

The holidays and baking go hand in hand. This Christmas, break out the mint and make these amazing Peppermint Chocolate Cake Mix Cookies for all to enjoy!

I’m a real life cookie monster. Like, seriously don’t put cookies anywhere near me because I am not going to be able to resist. Mathlete claims my love of cookies is the reason I love Christmas so much. I mean, during Christmastime, you can’t go anywhere without there being Christmas cookies!

Peppermint chocolate cake mix cookies that are so easy to make but ridiculously delicious.

When I joined the Cookie Exchange Blop Hop, I instantly knew my chocolate cake mix cookies would be some mixture of my two favorite holiday flavors and thus, Peppermint Chocolate Cake Mix Cookies were born!

My daughter is really into baking and playing in the kitchen right now. She likes to try and do most of it on her own so, while she is still learning, she makes a lot of stuff with cake mix. It allows her to mix and bake without me always needing to be there to make sure she scoops and levels the flour just right.

A win for both of us! When I started making these chocolate cake mix cookies, I knew cake mix would be the best way to go with them because they would be easy as well as delicious.

I totally want one of these peppermint chocolate cake mix cookies right now. They look so yummy. Peppermint and chocolate make the perfect Christmas cookie! These start with cake mix so they are so easy.

These cake box cookies were so good that I had to take them all to my office so that I wouldn’t eat every single one of them. They were the perfect combination of chocolate and peppermint which, for me, are the essential holiday flavors!

Peppermint Chocolate Cake Mix Cookies

Ingredients
  • 1 box Devil's Food Cake Mix
  • 1/3 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 2 large Eggs
  • 1/4 cup Sugar
  • 1/2 cup Peppermint Chocolate Chips
  • 3 Candy Canes crushed
Glaze:
  • 1 cup Powdered Sugar
  • 2-3 tbsp Milk
  • 1/4 tsp Peppermint Extract
Instructions
  1. Preheat the oven to 350 degrees. Line 2 large baking sheets with parchment paper. Set aside.

  2. In a large bowl, combine the cake mix, oil, vanilla and eggs. Stir until a dough forms. Fold in mint chocolate chips. 

  3. Place dough in the refrigerator for 30 minutes {do not skip this step!}.

  4. Remove dough from the refrigerator and scoop into 1-inch balls. Roll in sugar and place on prepared baking sheets about 1 inch apart.

  5. Bake at 350 degrees for 8-10 minutes. Cool on baking sheet for one minute and then transfer to nonstick cooling rack to cool completely.

  6. In a small bowl, combine 1 cup powdered sugar with 2 Tbsp milk and 1/4 tsp peppermint extract. Stir well until combined. 

  7. If needed, add additional milk to reach desired consistency. Drizzle over cookies and sprinkle with crushed candy cane pieces. Let sit for 15 minutes for glaze to set.
