Every family needs a few insanely good one pot recipes that can be thrown together on busy weeknights or when no one feels like putting much effort into cooking. One pot spinach artichoke pasta is just that recipe! With all the flavors of your favorite spinach artichoke dip mixed with al dente pasta and made in one pot, you can’t go wrong serving this recipe over and over.
This dish came about because my daughter just recently moved to the next level in gymnastics. I’m a super proud mom {hence, why I am telling the world} but now an even busier one. With that move to the next level comes more practice and more time away from home on weeknights. That means more quick and easy recipes like one pot spinach artichoke pasta hit my table from week to week.
This pasta recipe is one of the easiest one pot pasta meals. I can get it started and then help the kids with homework or prepare for gymnastics practice while it cooks away on the stove.
I’ve changed the type of pasta in this around a few times but I always come back to penne. It just works perfectly in this dish.
Toss some chicken in for an extra protein boost if you want {mathlete always wants meat in his meals}. No matter what, you are less than 30 minutes away from pure comfort food.
I use fresh spinach in this recipe but, in a pinch, you can substitute it with frozen spinach. Just be sure to squeeze all the extra moisture out of it before adding it to the recipe. Either way, it is one of the best spinach and artichoke recipes you will find.

What you’ll need for this recipe:
One Pot Spinach Artichoke Pasta
Ingredients
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 16 oz penne pasta
- 1 can quartered artichokes, drained
- 2 Tbsp butter
- 2 cups chicken broth
- 1 cup milk
- 1 cup spinach, roughly chopped
- 1/2 cup shredded Gruyere or Swiss cheese
- 1/4 cup grated Parmesan cheese
- 1/8 tsp crushed red pepper
- salt and pepper
Instructions
- Heat oil in large pot over medium heat. Add onion and garlic and cook for 3-5 minutes or until softened.
- Add pasta, artichokes, butter, chicken broth and milk and bring to a boil. Reduce heat to simmer and cook for 10 minutes, stirring occasionally.
- Add spinach and cook for an additional 8-10 minutes. Remove from heat and stir in cheeses and crushed red pepper. {If the pasta is too thick, thin with extra milk}. Season with salt and pepper.
