Insanely delicious and ridiculously easy meet in this recipe for Spinach Artichoke One Pot Pasta! This spinach artichoke recipe is perfect for a busy night. You don’t have to sacrifice flavor with this dish! You have to try it to believe how good it is!

Every family needs a few insanely good one pot recipes that can be thrown together on busy weeknights or when no one feels like putting much effort into cooking. One pot spinach artichoke pasta is just that recipe! With all the flavors of your favorite spinach artichoke dip mixed with al dente pasta and made in one pot, you can’t go wrong serving this recipe over and over.

This dish came about because my daughter just recently moved to the next level in gymnastics. I’m a super proud mom {hence, why I am telling the world} but now an even busier one. With that move to the next level comes more practice and more time away from home on weeknights. That means more quick and easy recipes like one pot spinach artichoke pasta hit my table from week to week.

This pasta recipe is one of the easiest one pot pasta meals. I can get it started and then help the kids with homework or prepare for gymnastics practice while it cooks away on the stove. 

One Pot Spinach Artichoke Pasta

I’ve changed the type of pasta in this around a few times but I always come back to penne. It just works perfectly in this dish.

Toss some chicken in for an extra protein boost if you want {mathlete always wants meat in his meals}. No matter what, you are less than 30 minutes away from pure comfort food.

Spinach Artichoke Pasta

I use fresh spinach in this recipe but, in a pinch, you can substitute it with frozen spinach. Just be sure to squeeze all the extra moisture out of it before adding it to the recipe. Either way, it is one of the best spinach and artichoke recipes you will find.

Nothing beats a one pot pasta recipe on a busy night! This spinach and artichoke version is so creamy and delicious. It will be an instant hit.

Ingredients
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 16 oz penne pasta
  • 1 can quartered artichokes, drained
  • 2 Tbsp butter
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup spinach, roughly chopped
  • 1/2 cup shredded Gruyere or Swiss cheese
  • 1/4 cup grated Parmesan cheese
  • 1/8 tsp crushed red pepper
  • salt and pepper
Instructions
  1. Heat oil in large pot over medium heat. Add onion and garlic and cook for 3-5 minutes or until softened.

  2. Add pasta, artichokes, butter, chicken broth and milk and bring to a boil. Reduce heat to simmer and cook for 10 minutes, stirring occasionally.

  3. Add spinach and cook for an additional 8-10 minutes. Remove from heat and stir in cheeses and crushed red pepper. {If the pasta is too thick, thin with extra milk}. Season with salt and pepper.

    I am currently making this as I type and it smells delicious! I am way too excited to try it!! I did have a question in regards to the nutrition facts. I noticed there wasnโ€™t a serving size. Is that info for the dish as a whole? Or by cup?

      I just sent an email to my tech guy because it looks like it isn’t displaying the serving sizes on the recipe card. That nutritional information is for the entire pot to serve 6 people.

    Looks amazing! Question: if I want to use half the amount of pasta, do I use half the amount of chicken broth? Or is it more complicated than that? Newbie over here, just trying to figure this out. Thanks!

      Yes, you should be fine with that modification. I have never made the recipe that way but generally it would work that way.

    I love veggies, so I think this recipe would be good with half the pasta but keep the same amount of everything else. I used the whole 16 oz of pasta by I also added mushrooms, sun dried tomatoes, and olives. Seemed like too much pasta.

    Just finished making this and getting set to put it out for dinner – but tasted and OMG I love it already!!! And it was SO EASY! I used frozen chopped spinach and a jar of quartered articoke hearts in herbs and vinegar (drained), because that’s what I had. I’ll absolutely be making this again and again!!

      I forgot to mention my one other big change – I didn’t have enough penne in the cabinet, so I used bowtie noodles (only 8 oz), and that worked perfectly for me!

    Is the pasta already cooked when you add it or does it cook in the chicken broth/milk?

    If I’m going to add chicken to this dish what would you reccomend seasoning it with and is it best to add in the cooked chicken pieces just prior to serving? I’m excited to try this recipe, thank you for sharing it with us!

      Hi – I would season the chicken with salt and pepper. You could add a little Italian seasoning too if you wanted. Definitely at least partially cook the chicken prior to adding it to the recipe or add fully cooked chicken at the end.

    Tried this receipe and was very pleased. Added partially cooked chicken and also partially cooked the penne. Used Gruyere and Parmesan cheeses. Very good combination.
