Lemon Herb Chicken Recipe Tips and Storage
Can I use a different cut of chicken? This recipe definitely works with boneless, skinless chicken thighs and even chicken breasts. The cooking time will need to be modified based on which cut of chicken is being used to ensure that the internal temperature reaches 165 degrees.
Can I use a different herb? Absolutely! You can easily substitute the oregano with Italian seasoning, thyme, or rosemary. If you are using dried herbs, you’ll use the same amount.
Should I marinate the chicken before cooking? You can add the marinade to the baking dish and let it sit for 15-20 minutes but it isn’t necessary. Since it includes lemon juice, you don’t want it let it sit more than 1-2 hours or it will affect the texture of the chicken.
How do I store leftovers? Transfer chicken to an airtight container and store in the refrigerator for up to five (5) days. Alternatively, you can transfer the cooked chicken to a freezer safe container and freeze for up to three (3) months. Defrost the chicken thighs in the refrigerator before reheating.
