Preheat the oven to 375 degrees and spray the bottom of a 9x13 baking dish with non-stick cooking spray.
Arrange chicken thighs in the baking dish side by side.

In a mixing bowl, add the olive oil, lemon juice, minced garlic, oregano, salt and pepper. Whisk until well combined.

Using a silicone brush, brush the mixture over the chicken thighs. Top chicken with slices of lemon.

Bake chicken for 35-40 minutes. Internal temperature of the chicken should reach 165 degrees.
Garnish with chopped parsley and additional lemon if desired.

Store leftovers in an airtight container in the fridge for up to 5 days. Or, transfer to freezer safe container and freeze for up to 3 months. Defrost in the refrigerator before reheating.
