Herby Baked Lemon Chicken Thighs

Ingredients

  • 6 chicken thighs bone in and skin on, trimmed
  • ½ cup olive oil
  • cup lemon juice
  • 1 Tablespoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 lemon sliced

Optional Garnishes

  • Extra lemon slices
  • Chopped parsley

Instructions

  • Preheat the oven to 375 degrees and spray the bottom of a 9x13 baking dish with non-stick cooking spray.
  • Arrange chicken thighs in the baking dish side by side.

  • In a mixing bowl, add the olive oil, lemon juice, minced garlic, oregano, salt and pepper. Whisk until well combined.

  • Using a silicone brush, brush the mixture over the chicken thighs. Top chicken with slices of lemon.

  • Bake chicken for 35-40 minutes. Internal temperature of the chicken should reach 165 degrees.
  • Garnish with chopped parsley and additional lemon if desired.

Notes

  • Store leftovers in an airtight container in the fridge for up to 5 days. Or, transfer to freezer safe container and freeze for up to 3 months. Defrost in the refrigerator before reheating.
