Homemade Bacon Guacamole

Guacamole is just one of those dips that no one can resist! Add some bacon to your guacamole recipe to make some Homemade Bacon Guacamole and ensure the bowl gets emptied every time!
To a lot of people, there isn’t much that you can do to guacamole to make it any better than it already is. It’s perfectly creamy, tangy and spicy all mixed into one bowl. What else could you want?!
Now, of course, I have already revealed that I add salsa to my guac for the texture issue I have {note: I fully understand it is me…not the guac!} but when we were in New York recently though, I had guacamole with an ingredient that I wouldn’t have really thought to put in…

Yep, that is delicious bacon! I chose that picture from Shockingly Delicious because 1) it looks so good and 2) the title of the picture is “is there anything better than bacon…no”.
Now, I’m not one of those people who puts bacon on everything! I love the addition of the porky goodness to some things but try to keep it out of others {ahem…ice cream} so I was a little skeptical when I saw it on the menu. But, I figured it was worth a try.
Oh…I can’t even describe it. Well, yes I can. Yum…YUM…YUMYUMYUM!
When I find something I really like at a restaurant, I instantly want to try and recreate it in some form at home. So, I started with my recipe for guacamole from last year and tweaked it a bit here and there to come up with this delicious bacon guacamole dip!
I tried those little flax seed chip strips with the guacamole this time around. They were good but I think this would be even better with a real restaurant style chip. Enjoy!

Essential items for this recipe:
- Cutting board
- Mixing bowls

Ingredients
- 2 avocados
- 1/2 cup finely chopped red onion
- 2 serrano chiles finely chopped {seed them if you don't want it to be spicy}
- 1.5 Tbsp lime juice
- 1.5 Tbsp cilantro finely chopped
- 1 tsp kosher salt
- 1 roma tomato seeded and diced
- 1/4 tsp cumin
- 5 strips of bacon
- 1/4 cup pork rinds coarsely chopped
Instructions
- First up is the cooking of the pork. I do this in the oven (375 degrees) but you can do it however you choose. Once it is done, crumble 3 slices into one bowl and 2 slices into another. Set aside.
- Slice your avocados and remove the pits. Then, spoon out the inside into a large bowl. Mash slightly with a fork.
- Add the remaining ingredients {excluding bacon and pork rinds} to the bowl and stir/mash together. Refrigerate until ready to serve. {Tip: Push your plastic wrap all the way down on top of the guacamole so that you press out all the air. It will keep it fresher longer}
- Just before you are ready to serve, stir in 3 strips of crumbled bacon and 1/2 of the chopped pork rinds. Sprinkle remaining crumbled bacon and chopped pork rinds on top.
