Paleo Chicken Zucchini Fritters are so delicious and are ready in under 30 minutes! These zucchini fritters are the perfect healthy alternative to having a burger and they taste amazing! They are the perfect addition to your Whole30 or Paleo meal plan!

Whether you are following a paleo diet, trying Whole30 or just want a way to use up garden zucchini, these paleo chicken zucchini fritters are absolutely perfect! Just be sure you don’t forget the super yummy sauce too!

I love how easy these zucchini fritters are to put together. You only need a few ingredients, including shredded zucchini, and they cook so quickly. I topped mine with a delicious mustard chive sauce which is fantastic.

I am always on the hunt for low carb zucchini recipes during spring and summer and these paleo zucchini burgers definitely fit the bill.

Chicken Zucchini Burger Ingredients

  • Ground Chicken – Try to get a blend of light and dark meat for the best results. All white meat ground chicken will dry out quicker than a mix.
  • Zucchini – Look for smaller zucchini and be sure to squeeze as much moisture of them as possible after shredding.
  • Spices and Seasonings – Garlic powder, onion powder, cayenne pepper, and salt are used.
  • Egg – This acts as a binder for the ingredients.
  • Coconut Oil or Similar – This is perfect for cooking the patties.

Mustard Chive Sauce Ingredients

  • Mayonnaise – Look for a Paleo compliant one if you want to keep the recipe Paleo.
  • Mustard
  • Chives

Paleo Chicken Zucchini Fritters

Paleo chicken zucchini fritters is one of the low carb zucchini recipes around. Top them with a delicious mustard chive sauce for extra flavor.

Ingredients

  • 1 pound ground chicken
  • 2 small zucchini, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 egg
  • 1 Tablespoon coconut oil or Ghee

Mustard Chive Sauce

  • 1/4 cup Paleo mayonnaise
  • 2 Tablespoons mustard
  • 1 Tablespoon chives, finely chopped

Instructions

  • Place shredded zucchini on two paper towels. Squeeze excess moisture from zucchini. Transfer to bowl.
    2 small zucchini,
  • Add chicken, garlic powder, onion powder, cayenne pepper, egg and salt. Mix well. Form into patties.
    1 pound ground chicken, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/8 teaspoon cayenne pepper, 1 teaspoon salt, 1 egg
  • Heat oil or ghee in skillet over medium heat. Cook patties, working in batches, for 5-7 minutes on each side or until fully cooked.
    1 Tablespoon coconut oil or Ghee
  • In a small bowl, stir together mayonnaise, mustard and chives. Serve on top of cooked fritters.
    1/4 cup Paleo mayonnaise, 2 Tablespoons mustard, 1 Tablespoon chives,

Notes

  • Chicken patties can be formed and then frozen for up to 2 months. Partially or fully thaw prior to cooking. 
  • Mustard chive sauce can be made 2 days in advance and kept refrigerated until ready to use.

    1. Yes! I have frozen them uncooked and then thawed before cooking. Not sure how they would do straight from freezer to cooking.

  10. I’m making this tonight as I have the insides of stuffed zucchini I want to use up. But I have the stuffing of like 10. How much measurement wise would I need?

  11. Hi there – how many fritters approx does this make? Cooking for a family of 3 adults and 2 children tonight, will this be enough?

    1. I am so sorry for the delay in getting back to you! This did not come into my email until today. It is probably too late but I did want to answer your question. I would make 1.5 of the recipe just to make sure. For the adults, they may want to eat more than 1 and that way, you would have plenty.
