Mason Jar Fever: Chocolate Eclair Cake in a Jar

Chocolate Eclair Cake in a Jar is a super simple dessert that requires no baking and is served in a mason jar! It is guaranteed to be a crowd pleaser and one of the easiest desserts you will ever make! It’s even easier to serve to a crowd because it’s in a jar!

Way back in the day {like before I knew what natural light for photography was}, I shared a family recipe that is always a hit: Chocolate Eclair Cake.  It is one of those non-baker desserts that you literally cannot.mess.up but always pleases a crowd. 

Check it out but ignore the awful pictures please {although a few of them are updated}!  One problem we sometimes have with the cake is serving it so I decided to do the food version of “put a bird on it” and put it in a jar.

The idea behind the cake is the same: layers of graham crackers, a pudding mixture and a topping of chocolate.  It just takes a slightly different form:

Chocolate Eclair Cake Ingredients:

Graham crackers
2 small boxes of vanilla instant pudding
3 cups of milk
1 container of cool whip {I use low fat}, thawed

Frosting
1/2 cup of milk
1/3 cup unsweetened cocoa
1 cup of sugar
2 Tbsp of butter, softened
1 tsp vanilla

Let’s Make It:

1)  Mix pudding and milk in a large bowl, stirring with a whisk until thickened.

Refrigerate for about 5 minutes to get a good pudding consistency.  Fold in cool whip.

2)  Place graham 5-6 graham crackers in a large bag.  Gently crush with the back of a wooden spoon or spatula.

3)  Fill the bottom of a mason jar with enough graham cracker crumbs to create a visible layer.

4)  Top graham cracker layer with a layer of pudding mixture.  Add another layer of graham cracker crumbs followed by pudding mixture.  Repeat until your jar is full ending with a pudding layer.  Put jars in the refrigerator while you prepare the frosting.

5)  In a heavy saucepan, bring milk and butter to a boil stirring frequently with a whisk.  Whisk in cocoa and sugar and boil for 1-2 minutes, whisking constantly.

Turn heat to low and whisk in vanilla.   Pour into the jars to create the chocolate top.

Refrigerate for at least an hour or until chocolate is set.
