Meal Planning: What to Cook Wednesday

Good morning!ย  Are you having a great week?ย  Mine has definitely been hectic.ย  Getting back into the routine of school and sports and PTA can be really tough.ย  I find I have less and less time to sit down and spend so much more time on the go.ย  All the rushing about definitely makes meal planning more difficult too.

This brings me to a question I want to post to you as readers:ย  Does What to Cook Wednesday help/interest you?ย  Or would you rather see it replaced with a different type of content post {recipe, craft, DIY, etc.}?ย  Let me know in the comments please!

For now, I will share with you a few things on our list for the upcoming week.ย  This month has really brought a heavier focus on clean eating in our house.ย  While we are far from perfect {ahem, is birthday cake clean?}, we definitely try to make most of our meals as clean as possible to focus on a healthier lifestyle with more nutritious foods.ย  I’ve always loved quinoa but can now say that the taste/texture of brown rice is really starting to grow on me too.

Anyhoo, here are a few things you’ll find being cooked up in our kitchen.

9.11 1-4
Sunday: Green Thai Chicken Coconut Curryย from Bless This Mess

Monday:ย  Turkey Taco Casseroleย from Honey We’re Home

Tuesday:ย  Crockpot Steak Carnitasย from Bless This Mess

Wednesday:ย  Loaded Quinoa Stir-Fryย from Callie Cooks

9.11 5-7
Thursday:ย  Zucchini and Corn Casseroleย from The Naked Kitchen

Friday:ย  Crockpot Honey Ginger Chickenย from The Skinny Fork

Saturday:ย  Pork Provencalย from The Gracious Pantry

Have you made anyย  major changes to the way you eat recently?ย  Have any good resources for clean eating?ย  I am always looking for new places to find food inspiration and recipes that will help me stay on track with this new goal of eating more whole foods and being good to my body.
