Beet Noodles with Blue Cheese Sauce

Just last year I fell in love with beets. Before that, I just could not stomach them. Then, I had them roasted with goat cheese. From there, I was hooked and went on to discover how amazing they are with blue cheese! I love egg rolls. So much so that I may have hidden the last one from my entire family the last time we ordered take out so that I could have it. I have never made them at home though and, honestly, not sure I would have the patience to roll them up and fry them. Instead, I make my own Chinese pork egg roll in a bowl which has all the yumminess of an egg roll with almost none of the work! Perfect solution for an easy dinner recipe!

Thai Green Curry Shrimp (Whole30, Paleo)

Brown Butter Sweet Potato Noodles

Paleo Korean Pork Tacos
